If you ever have any. With cooler weather coming I'm anticipating two things: Pizza and baked potatoes. I usually cook two, eat one and then I don't like the cold one much. I usually will dice it into salad. I guess they can be fried, twice baked, put in a soup maybe? What do you do with them?
can't say because I never have left over baked potatoes...but if I did I'd slice them up and put them in a salad, or mash them and serve them with grated cheese on top...or chop & fry them in a little butter and add onions and some chopped green veg.. ''Bubble & squeak''
Traditionally yes...fried potatoes, onions, and some kind of greens..(cabbage or brussels sprouts originally)... and fried in bacon fat.... but of course it's been adapted over the decades to be any kind of veggies...as long as there's potatoes in there and onions and some kind of veggies and also you can fry it in any kind of oil you like ...also some people add chopped bacon....
We ate out last night and my wife didn't eat all of her baked potato, we brought it home along with left-over steak. She will eat the rest of her steak and I'll eat the rest of mine and her potato. When we have a baked sweet potato, we end up eating the whole thing. We only bake sweet potato's at home, not regular potato's. If we do have a regular potato, we put it in the microwave and bake it that way. Homemade French Fries and fried potatoes are our thing, however I will make some mashed potato's sometimes. Any left-over fried potatoes I will use in the AM for breakfast.
That's a good question. I do only use my oven in the winter so while it cooks it heats my apartment also. I guess I cook two for the leftover and doesn't seem like such a waste running the oven though I do get the heat benefit. I guess I was just looking for some additional ideas for the leftover potato. Something more than dicing it into a salad for work.
What about grating it into a soup.... you could make a simple leek bacon and potato soup...or just leek and potato with some added spices if you don't want anything bland ... You don't need much potato to make the soup thick... When I make bacon and potato soup..I cook the bacon joint, then use the stock to add the potato, leeks or shredded cabbage, a couple of handfuls of lentils , and some carrots... cook it off for 20 minutes to ensure the lentils are cooked...less if I'm not using lentils... .. then chop some bacon from the joint, and add it in the last few minutes to the soup to heat through... You can make a whole pot of that and it will last for 3 days in the fridge... more if you freeze it... I've just had home made soup for dinner today...altho' no potatoes today... I made a Chicken Noodle stock with chopped fresh mushrooms, shredded carrots, and shredded cabbage ( I buy the cabbage already shredded and frozen, so they're easy to use a little at a time) then 3 minutes before the end I added Mushroom and ricotta and chicken ravioli parcels.. very filling and I've still got half a pot left deeelicious!!
Bless you Patsy...I used to cook much more varied meals but now I just cook for myself since my o/h became a pescatarian a couple of years ago, and only ever eats cold fish and salad, so now I just cook things for me that are easy...
That was my first thought, too, @Sheldon Scott . Then I realized that she was actually baking (as in the oven) the potatoes, and thought that I would not heat up the oven just to cook one lonely potato, either. However, we always use the microwave, so we do not technically have baked potatoes. Most restaurants wrap the potato in aluminum foil anyway, so it is actually just a steamed potato, for the most part, and not like just baking one in the oven.
I do the same Yvonne... cook the potato in the Microwave until it's almost done and then pop it in the Oven on high for the last 10 minutes to crisp up the skin... I like it better that way...
I seldom make bake potatoes unless they're sweet baked potatoes and then I use the microwave. Even in the winter my oven will heat up the house too much unless I'm using it early morning.
Yes, it seems a waste to cook just one potato though it does heat my apartment and I don't have to use the heat if I have used the oven. Thanks for some ideas everyone. I do use the second left over. Just needed some additional ideas.
