Peanut Butter Cookies

    I found this on facebook. I've made them with white or brown sugar.

    1 cup sugar
    1 cup peanut butter
    1 egg

    Mix ingredients well and put small scoops on a parchment lined cookie sheet. Flatten some with a glass or make grooves with a fork. Bake at 350F for about ten minutes.

    Great recipe to get the grandkids started in the kitchen!

    I have made them with a 1/2 cup of Splenda in place of the sugar and they are quite good!

    Also, wonder how it would work with my flax seed/chia seed PB?

    I think it would be fine!

    I use the bottom half from a jar of Smucker's natural peanut butter because it tends to be a little thicker than the top half, if that makes sense.

    Also I've found that these cookies are best eaten within 3 days of baking, not a problem in my house.

    Now I'm thinking of ways to use less PB per cookie since PB is pretty high calorie.

    Any suggestions?

    Maybe a number 14-15 banana?

    Something that's still healthy but will make me more cookies.

    Oatmeal?

    Now I just bought two rolls of slice and bake peanut butter cookies at the super market form room mate. If I had just waited I could have cooked a batch of cookies and she would have thought I was somebody.

    Please explain about the “flax seed/chia seed peanut butter”, @Chrissy Cross ! Do you mix the seeds in with your peanut butter, and if so, at what ratio ? Do you grind the seeds first or use them whole ?
    (In case you can’t tell...... I am seriously intrigued.)

    That is way too much effort for me @Yvonne Smith ...but you probably could. You like doing things like that.

    Okay, I looked it up, and it might be something that I would like to try making myself, Chrissy. Bobby eats a lot of peanut butter and bread, but he just uses regular peanut butter.
    Since I don’t eat much bread, I don’t eat much peanut butter either; but if I add the flax and chia, it would be even healthier, and would make the peanut butter go farther.
    I have about a half of a small jar of the natural peanut butter right now, so I am going to grind up some seeds and experiment !

    I had about a third of a small jar of peanut butter. I added about 2 tbsp of flax and 1 tbsp of chia to the little blender cup, blended them, and then stirred it slowly into the peanut butter. It was getting a little thick, so I added a tbsp of coconut oil to the mix.
    I now have about a half jar of peanut butter, and it tastes delicious. I put it back into the refrigerator to chill and let the flavors mix with the peanut butter.
    I think that I am going to like this,@Chrissy Cross , and will keep experimenting until I get the mixture just right for my taste !
