I have a few relatives who emigrated to Canada, way back in the 50's... there's a lot of Scots in Canada, and Australia, more than the USA...

I have never had chicken and waffles. I'm not a fan of maple syrup so that kind of ruins it for me. However .. I do enjoy a wee bit of honey on my fried chicken ..and I like a biscuit once in a while so maybe I should revisit the possibility of this dish .. just with some honey rather than syrup.
