What's For Supper?

    I had dinner about an hour ago (it's past 8pm here now)...

    .... 1/2 of a Mushroom and Spinach Quiche...and swede and carrot mash...nothing exciting but tasty and very filling...

    Supper tonight (Monday) was a pot luck over at the "Seniors Club"...

    Yes I overate as usual at these events, but a good time was had by all...
    They had turkey (again) along with about 8 different hot dishes, tons of veggies of all kinds, and loads of different salads..

    I won't get into the desserts because they were something else..

    I have come to the conclusion that.............

    WHEN YOU ARE NOT AT HOME, CALORIES DON'T COUNT ........

    Will have lunch at our local Georgian restaurant, and then aircraft food and booze for the rest of the day :rolleyes:

    I have absolutely NO idea what to make for supper tonight..
    After last night, who wants to eat, however we MUST eat supper..

    Usually when this happens, I put on the BBQ some pre made burgers frozen..
    Steam up some kind of veggie and we end up with a meal..

    I can also open up a large can of salmon and make patties that we can have with a salad..

    I will let you know what I decided on doing........

    Salmon poached in butter
    Roasted Brussels sprouts
    Celery and sliced tomatoes

    Love those one dish meals...

    Just cleaned up the leftovers plus y wife opened a pint of vegetable soup. Don't know what we'll have today. I have some coupons from Hardees buy one and get one free. Haven't been to Hardees in years and it's the closest place to us.

    Thursday night was again one of those last minute meals..
    I threw on the BBQ some frozen veal rib steaks...
    I had some cold broccoli salad left over....

    VOILA !!!!! A meal at the last moment and it was pretty good.....

    For tonight (Christmas night) we are going out to the local Legion where they put on a supper for those that want to attend.. Usually there are about close to 150 people that go.. There is NO CHARGE at all and the meal is the traditional Turkey with all the trimmings and homemade baked desserts..

    OK... I'm back from the dinner......... They had... EVERYTHING WAS HOMEMADE !!!!
    There was about 75 people..

    Coleslaw
    Sweet potato mashed with brown sugar and some sort of topping
    Mashed turnip
    Mashed real spuds
    Diced carrots
    Stuffing
    Some sort of rice dish with veggies
    Baked ham
    TURKEY that was juicy and NOT dry... Both dark and white meat..
    Gravy
    Cranberry sauce
    Buns and real butter

    Desserts
    A variety of about one dozen different cookies
    5 different types of homemade pies with vanilla ice cream
    Bakings of all kinds like date squares, chocolate squares, and lots of bark
    Pot of Tea
    Pots of coffee
    All kinds of mints and Christmas candies

    There was presents for everyone.. I got a LARGE HAM (about 5 pounds)
    I got a recipe book to enter my favourite recipes
    Princess got a lovely statue of an angel and a box with lots of nail polish and ladies nail stuff..

    Christmas dinner......Cornish Game hen, dressing, mashed potatoes, candied sweet potatoes, green beans, whole berry cranberry sauce and biscuits.
    I had mashed sweet potatoes thawed for making a pie but decided we didn't need it. Maybe this weekend.

    Back to our normal routine of cooking... WHATEVER NORMAL IS ..............
    Chicken drums dry marinated and on the BBQ they will go...

    A green salad with loads of veggies.. Lettuce, onion, scraped carrot, sweet pepper, sliced mushrooms, and broccoli florets......
    My homemade dressing using EVOO, balsamic vinegar, dijon, dash of syrup......

    Breakfast: 3 egg omelette with 2 slices of turkey bacon for my wife
    3 scrambled eggs with some cheese for me..

    Christmas eve dinner.:. I cooked a 1/2 leg of lamb on Christmas eve and had it lovely and pink in the middle for Dinner , sliced with Crispy roasted potatoes, carrots, swede and Yorkshire (batter) pudding...

    My o/h doesn't eat meat so he had Smoked Salmon fillets Baked in a Tandoori crust with Grape, tomatoes, and parmesan cheese salad with a sweet chilli sauce

    On Christmas day I had more of the Carved Lamb...this time served smeared thinly with Greek taramasalata, with a side serving of grapes and tomatoes ...followed by 3 miniature Belgian dark chocolate melt in the middle sponge puddings served with Bavarian Blu Cheese

    Today I took the rest of the Lamb and ground it in the blender...added it to caramelized onions, Broccoli, celery, carrots and swede, cooked it in a red wine , Herb and beef gravy...then topped with Mashed sweet Potatoes and baked it in the oven for 30 minutes...and when it'd cooled I divided it up into 3 separate meals and Froze it for later in the week ..




    For dinner tonight...trying to not have anything too rich today ...I had a small Chicken Mushroom and Tarragon pie....

    Ruby...They are just little tiny Chocolate sponge puddings probably just a little bigger than a fererro Roche chocolate ...filled with soft Belgian chocolate in the middle and once you cut them open after they're baked the hot chocolate in the middle runs out.






    The Bavarian Blu cheese is soft mild blue and non acidic

    ......and I leave it to stand at room temperature for 30 minutes or zap it in the microwave for just 6 seconds on low just to get it very slightly tepid and runny ...and serve it along with the chocolate pudding.....so much nicer and tastier than ice-cream..

    I wish I'd taken a picture.:)

    I still have some puddings in the freezer, so next time I buy more cheese I'll take a picture and show you..:D
