Looks good, Lon. I got a great omelet at the Waffle House one time. It had sausage and green peppers, plus a lot of other things (maybe cheese?). Never was able to reproduce an omelet at home that good.
I like omelettes with sauteed: red peppers, broccoli, & onions added to the egg mixture, filled with cheddar or pepper-jack cheese.
I absolutely LOVE Waffle House ham/cheese omelet. Unfortunately here, Waffle House isn't nearly as close as the one that was in Jacksonville. Waffle House also make terrific hash browns. I get them plain. Did find a breakfast restaurant here in town that will serve a Bloody Mary, if ordered. Don't have to go to Mimi's anymore for that, although I do love Mimi's Eggs Benedict.
I don't dislike omelettes. If an omelette is set before me for breakfast, I can eat it. However, there are a lot of better things you can do with an egg.
Eggs Benedict, no. While I suppose it could be prepared well, I've tried it a couple of times and the eggs were practically raw. I can't eat sunnyside up either.
If I’m in a hurry I make myself an omelette but I much prefer a 16oz (+) Ribeye with a couple of over easy or medium eggs on the side.
