I never heard of a kolache until now. It's added to my church brunch list. I also read that these originated in Czechoslovakia and Slovenia with fruit fillings, but the inclusion of sausage is a pure Central Texas thing.
There are a lot of Czechs in central Texas, and plenty of Germans as well. Lots of interesting foods in the Hill Country. I much prefer savory kolaches to the fruit ones, though both are deee-lish. (You can get ham & cheese, jalapeno, etc.)
Interesting. I know of that population in Pennsylvania, Indiana and a couple of nearby states, but would never had thought "Texas." They do look good.
