    We have used hers for years...but so much salt and fat ...but good for stand in meal. Never thought about using puff pastry..will try that nect time.

    Not sure the problem is your recipe. Perhaps you over fill ? Or a oven issue.
    I use Pillsbury pie crust.I am going to try the pastry puff like Beth does on my next one.

    Actually, I had a bunch of small pie tins just like the ones that small frozen pot pies come in. I made my own crust, and then threw together a filling without using any real recipe. The bottom crust did not cook well at all. Now, this was a very long time ago. I gave it up when I realized that Swanson's go on sale for $1 each and I had bigger cost-savings fish to fry.

    With winter coming up, maybe I'll try my hand at it again. I do like pot pie. But as you know, there's no way to have a decent crust and avoid the fat. So homemade is only slightly less unhealthy than store bought.

    Somehow I've never been concerned about the fat content of pie crust. Is this a thing? :D :p

    If your going to eat store bought chicken pot pie..least get a good one. Maria Callendars is the best.

    Agreed 100%. Once you've had Marie Callndar's, there's no way to go back to Swanson or Banquet.

    I just commented that I went to the store and bought the fixins to make pot pie for dinner. It's the first time I've ever used pre-made pie dough. But for $2.50 I'm not gonna mess with making homemade.

    I have been using more and more "convenience" items such as frozen pie crusts lately. I'm just not as enthusiastic about spending hours in the kitchen every day, although I tried some pre-made dumplings recently that were a big disappointment. They were just big-ass noodles...nothing "dumpling" about them. So I'll go back to rolling and cutting my dumplings.

    My larger compromise was the canned soup. I really don't like using it. But when a recipe calls for undiluted "cream of," it's tough to get the right consistency from scratch.

    I've done pie crust, but I don't make it but every few years, if that.

    Yeah, my pie crusts are nothing to write home about. I should have paid more attention to my mother's technique. I buy the Mrs. Smith's deep dish frozen ones or the Pillsbury refrigerated ones that come in the rolls. Either choice is fine IMO.

    I bought the Pillsbury ones.

    After buying pre-made pie crust and canned soup for the filling, I'm wondering if I gain anything over just buying a frozen pot pie. The only other ingredients are frozen veggies and the chicken...hardly much "home made" to it. I guess if you have leftover chicken (and I did), it's a pretty cheap meal...maybe $3.50or less for a 9" pot pie.

    We'll see...I might be surprised.
