    Hah. I see you there. :D I have decided to follow @Bill Boggs and @Nancy Hart 's lead and try my hand at this diary thing. Since I'm always spouting off this will keep my random posts corralled into a single thread about my mundane life... or not.

    There probably won't be much of interest here, but let's run it up the flagpole and see who salutes, as my dad used to say.

    OK, quoting that expression made me curious. Where on earth did that come from? Let me Google that for you.

    So now I'm going to have to see if I can find this Stan Freberg fellow and find out if he was funny or what.

    So today I woke up early (for me). I didn't go to bed till after 2 a.m. and woke up at 7. Weird. I traipsed out to the backyard with my coffee and did some dead-heading. Everything is looking green and fresh. Something is eating my purple mum and I'm not pleased about that.

    I decided that today is "the day" that I say goodbye to the remaining hairs on my head, so we got out the clippers and my husband buzzed me. Shockingly, it's actually not too bad. :D My look went from Mental Patient to Cancer Patient in a matter of minutes, and now my head is covered in white hair about 1/2" long all over. I took a shower and didn't even need the hair dryer... bonus!

    I suppose our refrigerator is having new appliance envy since the new dishwasher was installed. Suddenly it's throwing codes and behaving badly. I had noticed that the heating element that runs round the doors to control condensation were not operating correctly and the sides of the box get really hot. The refrigerator is an LG french door model, about 11 or 12 years old. I'm not of a mind to have a repair guy start throwing parts at it, so I'm already looking online for a replacement before it burns the house down.

    The better half is obviously wanting a reason to get out of the house for a while and volunteered to go "check out" refrigerators at Lowes. I see one I like online but I'm not buying a $$$ appliance that we haven't seen in person again. So he took measurements and my list of "requirements" and headed out. (I'm not supposed to go out due to my compromised immune system. Plus this gives him a break from me, lol.)

    I have some zuchinni that I need to cook so that will be the dinner veggie this evening. Need to decide what to do with it.

    Lately I have been obsessed with Etsy. I've bought several headscarves from a breast cancer survivor who does beautiful work. Now I'm scoping out the Medic Alert bracelets. When I have lymph nodes removed and lymph channels cut during surgery, I will have a high risk of developing lymphedema in my right arm. In the future, I won't be able to have any injection, IV, blood pressure monitor, or any other procedure that could cause trauma to the arm--hence the need for the bracelet.

    Dang; I forgot to add that earlier, I put my wig on the hubby so he could see how it feels. (Yeah, we're weird people.) I couldn't resist taking his picture, haha. He sent it to all the kids and they are enjoying it quite a bit. (Such wiseasses; I don't know where they get that from.)

    A poster on another forum has a pair of bonded parakeets. The little female recently laid 5 eggs and two of them were broken. She has been sitting on the 3 remaining and yesterday 2 of them hatched! I hope the poster will post pictures; I'm trying to imagine how cute baby parakeets will be (at least when they get feathers.) The little mama continues to sit on the remaining egg with papa feeding her, so we'll see if the family increases.

    Great idea with the diary. I should start up a new one as my old ones went astray. Now that I am older and wiser and my behavior is exemplary, I may consider getting back down here with the bottom feeders. It is sort of like an eclectic blues band. Harmonicas, hats, goat hooves, chainsaws, and now wigs and parakeets. It sounds like a wild road trip to me.

    You definitely should crank up your diary. I never thought I'd care about putting my thoughts down but apparently I spam the rest of the forum with drivel so I might as well give this a shot!! :D

    Kind of a sad commentary on my life that I find baby parakeets so interesting. Who knew?

    As for me, I think you are doing a terrific job with your diary, Beth. Really terrific. Keep it up.

    As for one for me, I'll really, really have to think about that. But, I do keep busy daily.

    So today I decided to use some rotisserie chicken from the freezer to make Green Chile Chicken Enchiladas. I must say, they turned out excellent. So, I thought I'd share my cobbled-together recipe in case anyone has a bit of leftover chicken to use up. (I suppose if you don't have chicken you can sub other leftover meat or no meat at all... just cheese.)

    Green Chile Chicken Enchiladas
    (Makes about 6 Enchiladas) Preheat oven to 400 F

    1 cup or so of chopped cooked chicken
    14 oz Can Chicken Broth
    1/2 large onion, chopped
    6 corn tortillas (I suppose flour would work but I prefer corn)
    8 oz pkg Kraft Shredded Mexican Cheese blend (more if you love cheese)
    1 T Oil
    1 T Butter
    2 T Flour
    1/2 t salt
    1/2 t pepper
    1 T Taco seasoning (or cumin and chili powder)
    4 Oz Can Hatch chopped green chiles, mild or hot
    Sliced Jalapenos (optional)

    Toss the chopped chicken with the taco seasoning, and heat in the microwave for about a minute till warm. Set aside.

    For the Sauce:
    In a medium skillet, saute the chopped onion in the 1 T of oil. When translucent, push the onion to the side of the pan.

    Add the butter to the skillet and when melted, add the 2T of flour and stir for about a minute. You don't want to brown the flour. Add the salt and pepper.

    Add the chicken stock to the pan a bit at a time, whisking to get to the consistency of "sauce" that you like. (You may not need the entire can of stock.) Add the Hatch green chiles, including any liquid.
    Note: If you don't have chicken stock, use water.

    To Assemble the Enchiladas:
    In an 8x8 baking dish, spread a couple of ladles of the sauce from the skillet into the bottom. (This will keep your enchiladas from sticking.) Add a corn tortilla to the sauce in the skillet, flip it once till coated, then put it into the baking dish.

    Add 1/6 of the chicken and a nice handful of the cheese to the middle of the tortilla, and roll into an enchilada. Repeat with 5 more tortillas, then pour the remaining sauce over the 6 finished enchiladas. Top with a thick layer of shredded cheese, several jalapeno slices, and cover with foil.

    Bake about 30 minutes at 375-400 degrees till bubbly and the cheese is all gooey. Serve with tortilla chips and green salad.
