I think we had voles get to a few beets, but nothing major. Before we put in the electric fences, moose would get in and pull out all the beets. They didn't eat the beets or even the tops, but would pull them all out of the ground. They would also take one bite out of every head of cabbage, but never eat an entire head. The cabbage was the real reason we put the fences in. We have no livestock either, but we never had horses; too expensive and they didn't do great when the snow got over 4 feet deep. We have friends with horses, and they would sit in the barn for 9 months eating purchased hay.
Nope, you can grow Brussels sprouts on tables just fine. Height is not an issue, but width can be. Bush squashes takes a lot of room, but the vining types can be trained to a trellis just like melons or pole beans.

I haven't yet but will try these. Two of the Soya Soy beans came up in the peat pellets so far. We freeze our seeds some are 10 yr old. Mammoth Sunflowers came up nice in peat pellets. I'll have to keep them in pots till spring and inside once it gets cold. Here in N.Fl. we can get down to below zero, not often,; last time low was 5 F about 10 yr ago.

I have slowly gotten rid of most of my winter over plants in the house. I end up with everything from white flies to spider mites to scale. Kind of sad. I raised frangipani from seeds and kept them since moving to this house. 20 years Angel's trumpets for 35 years. All have new homes. Husband has a weeping fig he rescued from a neighbor's garbage 15 years ago. One branch grew through the window screen. Instead of trimming the branch, he cut the screen. But that tree doesn't seem to be bothered by pests. Good thing the room has vaulted ceilings.
I do have the equipment but not the energy to set i9t up or the want to. My grow lights haven't been used in decades. At least I found out the seeds will still germinate. Forecast calls for a hard winter this year so greenhouse would cost too much to heat. Of course, we could just cover half of it.
In your location, I would just cover it and grow cold-hardy stuff in there, like salad crops, broccoli, and maybe cabbage if you have the room. Wait until spring to grow the warm season stuff, as it will still give you a jump on your season.
