I considered boiling them, but then I'd have to wash a pot. If I bake them I can just toss the foil in the trash.
Roasted beets are delicious! I cube the beets in small squares and put them in a baking sheet lined with non stick foil and drizzle a little olive oil on them. When done, sprinkle a little sea salt. Baking the beets brings out the natural sweetness. I don't like beets normally, but baked beets, yum!
Yep, we usually roast them whole just cutting the leaves to stubs and leaving the root on. We then trim the root and leaf stubs off and cut them after they are cooked 'cause it is easier. They can even be mashed and eaten with butter and salt, or mixed with other veggies such as 'taters or carrots. One son of ours hated beets until he tasted them roasted. Now they are among his favorite vegetable.
I'm going to add this to my list of, "Things I never knew before." I like beet pickles but I have never baked them. I'll try that next spring when it's time to pull up beets.
You will be amazed how great they are, @Shirley Martin. If you like the pickled ones, you will really like the roasted ones. Even people who don't like pickled beets usually like them roasted or baked.
Beet Update: (Keep Scrolling, Anderson ) The Great Beet Experiment of '22 isn't going well so far. I'm not very knowledgeable when it comes to beets, but the ones I got from the store (delivery) are pretty big... like 3+ inches in diameter. The online instructions said to "roast whole for 30-40 minutes" but after an hour they were still hard when I stuck 'em with a knife. So they weren't ready for dinner but after I cleaned up the dishes I took them out of the oven to cool. I'll peel and slice them after they have cooled enough to handle. They were in a 400°F oven for about an hour and a half.
I love "rudies", as my sweet mama used to say. I also love turnips but I know how to cook those. I'm kind of anxious to taste the beets.
I've cubed sweet potatoes to mix with the beets to roast too, which are very tasty together. I've never roasted them whole though, but I will have to try that. They are hard to slice and they turned my hands purple, until I started wearing food gloves to peel and cube them.
From what I've read, after they are roasted whole it's easy to peel them under running water. Other people say the skins can be rubbed off with a paper towel. Guess I'll find out in a little while.
OK, the beets are peeled and sliced. They taste like beets. It was easy to peel them under running water using a stiff vegetable brush. The paper towel method also worked but was a lot messier. I think I'll stick to buying the pickled ones in a jar.
