I am going to make Chicken Cordon Bleu and Risotto with broccoli. I’ll be spending a little time in the kitchen today, since I haven’t made this in a while.
The better half has requested chicken fried steak and mashed potatoes. I'll make something green to go with it and I have a loaf of bread proofing.
I was gonna make an asparagus omelet for dinner last night, but my asparagus wuz funky. I don't believe I've made one before, but it sounds good. I picked up the fixin's today, so that will be dinner. This recipe has bell peppers, ham steak and provolone cheese. I'll have a salad with it. I've not decided if I'll make home fries or biscuits.
Bake it yourself taco pizza! I already had two big slices for lunch so plenty left for supper and lunch tomorrow. I add extra local cheddar cheese and medium-heat taco sauce to it.
There was a small Mexican chain back home called Anita's. She was from New Mexico. She had either 3 or 4 restaurants. She made a "Mexican Pizza," which was a tostada (plain toasted corn tortilla) with cheese, minced jalapeno and her very good (very thin) salsa on it. Anita was a pistol. She took no gruff from anybody. Her sister worked with her. You did not want to cross those buzz saws.
I made a coconut cake with coconut buttercream icing. We had a big slice of cake with a cup of coffee already. So maybe something light for supper like; a glass of water. But most likely we will be having a bowl of left over soup.
We went to the fitness center early this afternoon and did our exercises and swimming. On the way home, we stopped at KFC (they sent me some coupons) and picked up the chicken and sides special, so it is an early dinner for us today, and maybe a snack later. Mine would maybe be a green smoothie.
We just got back from “Mission bbq”. I love seafood but we never have it at the house because of my wife’s allergies. At Mission bbq, I can get a delicious salmon fillet for $13+. I always get it with spicey collard greens and cornbread. Any sit down restaurant would be much more expensive for comparable food. Yum.
