I got brave, ventured outside the Instant Pot and hit one out of the park tonight. It was chicken and mushrooms in a Madeira lemon butter sauce. So good and so easy that I am still in shock.that I cooked up such a tasty dish.
I like cooking with alcohol. I've made roasted chicken thighs with mango, papaya and rum. As Beth said, share the story. And good for you for pullin' the plug, as it were.
Using a 12 in. skillet, I liberally seasoned (salt & pepper) and sauteed 4 medium-sized chicken breasts in a bit of olive oil until golden brown. Then, setting the chicken aside , did the same thing to half an onion and pound of sliced mushrooms until onions caramelized and mushrooms got brown. Then stirred in 2 cups of Madeira, 1 cup of chicken broth, 2 tablespoons of lemon juice, half stick of butter and let mixture reduce down. Add a little flour or cornstarch to thicken mixture if needed.. Put chicken back in, cover skillet and cook for another 5 minutes or so. Plate and serve with veggie of your choice.
