Just saw..what is called Hummingbird Cake It looks so delicious...with fruits and nuts. Has anyone ever had? Or...made?
There are recipes all over the internet for Hummingbird cake. And yes, there are fruit and nuts in it. It has a cream cheese icing. I can post my recipe if you want it. I have used the recipe for many years and I think I found it in Southern Living Magazine eons ago.
Hummingbird Cake 3 cups all-purpose flour, sifted 2 cups sugar 1 teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon salt 2 cups chopped ripe bananas (about4-5) 1 (8 ounce) can of crushed pineapple, drained 1 cup canola oil or extra light olive oil 3 eggs, beaten 1½ teaspoons vanilla 1 cup of finely chopped pecans Icing: 8 ounces of cream cheese, softened 1 stick of unsalted butter, softened (1/2 cup) 1 pound of powdered sugar (approx. 4½ cups) 1 teaspoon vanilla 1 cup finely chopped pecans, optional Preheat oven to 350 degrees. Grease and flour two 8 or 9 inch round pans. You may also use a 13x9 inch pan. In a medium mixing bowl, sift together the flour, sugar, baking soda, cinnamon, and salt. In another large mixing bowl, mix or whisk together the oil, eggs, vanilla, pineapple, and bananas, do not use an electric mixer. Pour into the dry mixture and mix together with a large spatula or wooden spoon until flour mixture disappears. Do not beat. Fold in pecans. Spread evenly into pans. Bake for 30-40 minutes, or until tooth pick inserted in middle of cake comes out clean. Remove from oven and cool in pans for 5 minutes. Invert the cakes onto a rack to cool completely. Icing: In a medium mixing bowl, with an electric mixer, combine the cream cheese and butter and beat well. Add the powdered sugar and vanilla and beat on low speed until powdered sugar is combined. Mix at medium speed until smooth and creamy. Spread icing between layers of cake and then ice sides and top. You can sprinkle chopped pecans on the top of the cake and the sides, or leave plain.
I just googled some pics, and I'll tell ya, I could go for a piece of this cake right now with my soon to be cup of coffee. My sweet tooth is soaring again...
740 calories per serving. It sounds similar to the pig pickin' cake that my sister makes. It's so good that it's worth every one of those calories. It's "Worth the cheat."
