An open face deconstructed BLT to be politically correct. Basically a BLT that has been hacked into small pieces. The tomatoes are vine ripen greenhouse from a friend. Biting down into a BLT is one of the things I miss.
I bought a refrigerated pizza from ALDI, and some veggies & cheese to load it up. It's a "traditional crust" like I got before. I prefer thin crust, but they don't seem to offer them any smaller than 19", which is too big for my appetite and for my convection oven.
We weren't particularly hungry so I dragged out a few Tyson chicken nuggets and some frozen fries and tossed 'em into the air fryer. Whipped up cole slaw from a bagged mix and ta-da.
Haven't had a BLT in at least 8 years or more. I don't cook any longer so not much chance of having it again. Now what I really miss is a simple Dairy Queen Taco that they had 50 years ago, not much on it but lettuce and cheese but the meat was spiced well enough to taste good. I could wipe out 6 of those without breathing.
I had a large lunch (the mobile BBQ guy was set up), so dinner will likely be a salad and some dinner roll.
My neighbor down the street has a greenhouse and truck farm business. I went down to get some beautiful tomatoes because I can't wait another month! To tell the truth, I think he runs down to Indiana to get them this early. Huge slabs of tomatoes on toast with mayo etc.
