Due to my recent obsession with canning, I have finally decided to purchase an entry level Presto pressure canner. I also sent on to my daughter-in-law who has a crop of green beans to process, so we will be learning how to do this together.

And Kansans send them all to Colorado. :( I think we are finally through with them. It's been a couple of days since the cat found one in the house. He's still looking for them though.

OK, I snapped out of it and canceled this purchase. That would just be one more gigantic thing to store for what would likely be a one-time use. I'll stick with water bath canning and buy my green beans already canned. :D (My D-I-L is still getting hers, though.)

I didn't want to burst your bubble yesterday with a pressure cooker on the way. But everyone loves my dilly beans canned by water bath. The rest I freeze because they taste better than plain old canned.

Grandmother had one that looked just like that one except the metal was not polished and of course this was back in the 50s. Her and her brother were into canning Polk Salad and fruits or jellies. I was the official pan licker when it was jelly making time. Now it was in Humble that all the poke salad and black berries were found. Today it is so populated you would be hard pressed to find enough berries to make a cobbler.

Of course years ago it was cheaper to do these things but today the cost is so high to even can anything we would eat. I remember we would take fresh field corn and put it in the pressure cooker for x amount of minutes and then into freezer boxes to be get it stored for some yummy dinners all year. I don't consider this new generic corn real corn. It has no taste and is so small. I like those big ears of field corn, when you had a toe sack of those you had a pretty good load. 5 of us kids sitting around the table on a long wooden bench I made for the dinning room and none of us ever spoke a word when eating corn on the cob, it looked like a cartoon with 5 kids that had a mouth full of corn on the cob.

My mother canned green beans with a pressure cooker. Bushels of them every year. I thought they were terrible. We had them almost every meal. :p Freezing them would have been out of the question. It would have taken a large chest freezer.

I remember when you had to cook corn very soon after it was picked or it lost its sweetness. The new corn doesn't seem to be that way.

I have seen a lot of dill beans recipes; are they like pickles?? I've never had a dilly bean.

I decided against the pressure canner mainly because I probably wouldn't use it; I mostly put up pickles, jam and jelly which don't require pressure canning.

I have a Presto Pressure canner that is probably 40 years old. I pressure canned tons of green beans over the years. Now it sits in its’ box in the closet. I picked my fair share of all kinds of berries, as a kid. Wild blackberries and Dewberries are the best! They make delicious pies and jelly. Tame/ backyard blackberries taste nothing like the wild ones. I can still smell the pie baking in the oven and the jelly being cooked.:)

I started having issues with everything from eBay after they sold out to a new owner. It also coincides with the return of Hong Kong to China. Today there are tons of inferior products coming from Hong Kong and after having two dead on arrival computer motherboards same purchase, they both were dead and eBay only repaid me for one because they wanted me to use paypal which I will not use. The first return was made right back to my account and they approved both repayments but some idiot in charge refuse to send the second one to my bank account just like I paid them. I promised the guy I would cause him more loss than he can imagine for the way they treated me. I have not and will never ever use eBay again.
