So I don't recall reading if you've cooked with coconut oil. I gotta think you've tried it. Flavored or refined?
Yes, I have tried coconut oil for a few things but it's not something I particularly like. I have bought it for specific recipes or whatever, then ended up throwing it out in a pantry purge. I don't make or keep flavored oils.
It is hot outside, people. I picked another armload of cucumbers, several tomatoes, and about a dozen jalapenos. I canned 6 pints of salsa using my tomatoes and jalapenos; it turned out really good if I do say so. This afternoon I'll be canning plain tomatoes; I believe I have enough for 3 or 4 pints. I'm also going to make a small jar of pickled jalapenos. I'm back to considering a pressure canner so I can put up some soups and stuff but still not sure how much I'd use it. It's another BIG thing to find storage space for. I put one in my cart on Amazon so I'll wait and see if they have a price reduction as the summer canning season winds down. Today is our anniversary. Thirty-six years and it doesn't seem possible. So we're going to go to Pappadeaux's seafood restaurant for an early dinner. I wish it was oyster season because I'd love fried oysters, but I'll probably have a crawfish platter instead. I'm getting hungry already!

Thanks, Nancy! And yep, mud bugs are very popular eatin' in east Texas/Louisiana. I had fried crawfish and etouffee'; it was yummy.
