How Many Ways Can We Make Chicken Soup?

    I actually don't like rice or pasta in my chicken soup. Like it with just the veggies and chicken. Of course I was the only one in the family that didn't like it, so I made the fine soup noodles for the rest. Had to be those very fine noodles because that's what hubby liked.

    I like pasta in it, the tiny acini de pepe. I also add parm cheese to my bowl. I add the usual onion/carrot/celery but sometimes add spinach or other greens.

    It's been a long time, but I would sometimes make tiny meatballs for the soup and add escarole for Italian Wedding soup.

    I made the acini de pepe for my daughter when she was a little girl. She loved that.

    Italian wedding soup is also a favorite in my family.

    I'm not fond of cooked celery but added it for flavor. In Hungary you couldn't even find the celery stalk, only the root. It has a slightly different flavor. I grew to like it better.

    I always add parsnips to my soup too, not many, just a few.

    Pasta. I absolutely would not like peas in my chicken soup. :eek:

    Well..I wouldn't want peas in there..I like celery, spinach, corn, zucchini..but not peas.. I don't want oatmeal in there either.lol..go figure :)

    I want a bowl of that wedding soup now, looks so good. Maybe when I move in with my daughter one day, I'll get back to cooking. They'll love me even more than they do now...if that's possible. :)

    My mother always made her chicken soup with the carrots sliced in wide circles. I chop mine into chunks. She always used flat egg noodles.

    I like all shapes..but lately I try to make it something like those tiny shells and such in the little bags..I like it to fit on the spoon..also I use a large mug for my soup..my favorite way to eat it.

    This is what mine looked like but had parsnips sliced and celery and some chicken breast chunks. I also did matzo balls sometimes. My hubby liked liver dumplings too...wasn't crazy about making those.
