Colby Cheese

    I wonder if the thin slices allow it to warm up quicker. Cheese is most flavorful when eaten at room temp...at least, it tastes better that way to me. I slice it and let it sit for a while, if I remember to do so.

    I like cheese at room temperature also. When I was growing up, and mom took me along on trips to Spokane (2 hour drive for us each way), and on the way home we would often stop at one of the large grocery stores in Spokane (didn’t have those in our little town), and go to the cheese section.
    We would each pick out our favorite kinds, Monterey Jack with caraway seeds for mom, and smoked provolone for me. Then we picked out what mom called an “Adventure Cheese”, which was a kind we had never tried before and we had no idea if we would like it or not.

    Since the cheese was cold, she put the cheese in the front dash of the car where it was warmer , to let it warm up, and then we would open up the packages and nibble on cheese on the way back home again.
    It was one of my favorite things about the Spokane trips, and when my kids were growing up, we sometimes had Adventure Cheese, too.

    We used to buy a lot of different cheeses, just to have a chunk with breakfast if we weren’t having eggs. Then we stumbled across a cheese at Costco and it’s now the only snack cheese we buy. We’ve only seen it in the Costco store, Cabot 3-year aged cheddar in a black plastic wrap , absolutely delicious, intense flavor.

    When Michelle went shopping while we were visiting in Maryland, she found Colby Cheese and bought some for me. I hadn't lived in a place where I could buy it for quite a while. It's not as good as the wax-wrapped Colby that I would buy in the UP of Michigan or California, but it's Colby. I was going to buy some to take back with me to Maine, but I forgot. After arriving home, I went to Hannaford's Supermarket in Millinocket to get some Cheddar Cheese, and - of all things - found that they now carry Colby as well. So, my Colby problems are fixed, and all is right in the world; or would be if I could get someone near me to carry tart frozen cherries.
