Yvonne and I were out and about yesterday and we stopped at Captain D’s for lunch. Notably, we’ve both backed away from fried foods lately but D’s is normally pretty good and the portions are were decent for the price so we took a break with our individual diets to ghosh on some fish and shrimp.

In short, we may try it again but it’s doubtful. The portions were reduced dramatically, the fish tasted like dirty deep fry grease and whilst one never really expects the plates to look like the pictures on the wall, these were so far off that it would leave one to believe that the pictures were from some other restaurant.

It is getting like that a lot lately. But the good news is we save so much money not eating out that we can afford the excessive price increases at the grocery stores.:(

I made an egg & cheese omelette sandwich w/potato chips.

The first egg I cracked reminded me of the risks with country eggs. It looked like the victim of an Area 51 crash when I cracked it open.

You can candle your eggs and/or float them for safety.;) Or just crack them first into a cup before putting in the pan.

I've run into 3 or 4 eggs like that in he past 10+ years. I was making a 2 egg omelette and ended up doing just as you recommended. The first egg (the bad one) went into the bowl I was gonna whisk the eggs in. So I got out a fresh bowl and then cracked each into a cup before putting it into the bowl. One of the other 2 eggs looked like it had been fertilized but did not progress beyond that point.

I usually crack my eggs into a cup before putting them into a frying pan (or pan of water for poaching) because it's easier to get them close to the pan & slide them in so the yolks don't break...the cup keeps my thumbs away from the heat.

I've gone full circle with kitchen appliances and cooking methods. When I first got a microwave, I loved making fast, hot sandwiches. Now I've been making hot ham & cheese sandwiches in my convection oven, enjoying the way it crisps the bun and gets the cheese all gooey.

There are a bunch of recipes out there for this where you make a spread with softened butter, mayo, the mustard of your choice, and onion powder or garlic salt (or both.)

I've been leaning that way myself, Julia. I'll have a sizeable lunch, and then a salad with bread or cheese & crackers for dinner.

There's an old adage about this:
Eat breakfast like a king, lunch like a prince, and dinner like a pauper.
