We already did the traditional black-eyed peas and greens earlier this week; so today I am cooking some red beans and making a hot and spicy chili for tonight and tomorrow. Bobby grumbled that we were going to start the new year with leftovers, so I said well, we just won’t eat any of the chili today, and then it won’t be leftovers tomorrow. He says he is eating it whenever it gets done, not waiting for tomorrow….
We've been having big salads and bakery bread on Friday nights because that's the day we go grocery shopping and it's all fresh. But last night I just thought it was too cold for salad and I was also feeling lazy and didn't want to spend the forty minutes prep time for a really big salad. So I found a recipe on line for cabbage/potato/onion soup and made a big pot full. Total prep time 2 hours! Hah! That will teach me. It was delicious though, we all loved it.
Last night we had two of my favorite things--left over scalloped potatoes with ham and a layered salad. It was delightful!
That sounds like the perfect meal to me. I haven't had layered salad in years, now that you've reminded me it's on the list!
It brought back a "famine" memory, as I remember a time when we couldn't get fresh produce for months. Our first fresh stuff was lettuce, and my wife constructed a layered salad. It was the most wonderful thing I had ever tasted!
Homemade pizza today. I'm trying a new-to-me recipe for the dough made in a food processor. I made it yesterday and just got it rolled out to put toppings on.
