    I just help my wife peel Yukon gold potatoes for mash potatoes to go with vinegar pepper pork chops, the other sides are asparagus, and apple sauce. This is my daughter's favorite recipe, she's looking forward to dinner tonight.

    It's an easy recipe that was handed down from my mom, no exact measurements.
    Here's the recipes
    We use bone in or boneless pork chops
    Salt and pepper pork chops to taste
    add a little oil to preheated skillet
    sear the pork chops 4-5minutes per side
    There are many brands but we use B&G sweet red peppers, ingredients will indicate there in vinagar.
    Add vinegar peppers to top of each chop, and juice from jar to skillet.
    simmer covered 15-20 minutes.
    serve
    I think it's an aquaired taste, very vinagary.
    we use the juice on the mashed potatoes like it is gravy.
    This is not for everyone but my daughter loves it she's chosen it as her birthday meal for as long as I can remember.
    PS times may vary Depending on the thickness of the pork chop.

    Thanks, Tony. Sounds good to me. We like Mississippi Pot Roast which is cooked with pepperoncini and a little juice from the jar. Some meats just taste good with a little vinegar!

    My daughter purchased a Little Caesars, pizza kit From the school's fundraiser. She made them for dinner.
    There were two cheese pizzas and 2 square pull apart soft breadsticks.
    All I can say was pizzas were edible, I Didn't try the bread sticks. I could smell The garlic from across the room, not for me.

    We had beef and beans, my husband's recipe. It's a very savory stew with red beans and chunks of beef with fat. Delicious with a dollop of sour cream on top.

    From what I can tell (I really have to write this down), he soaks the beans overnight, then boils them while (I think) sautéing the beef chunks which are then added to the beans. Makes a very savory pot of stew that lasts days.

    Also, organic green/peppermint tea afterwards for me.

    Beth, can you have a small portion of brown rice? I have about half cup maybe a cup when I want to work for it. I cook a large pot of rice, then freeze in small containers for meals later. Jake isn't diabetic so he eats whatever he wants.
    , but tries to eat healthy most of the time.
    His blood work showed a little fatty liver so I remind him about too many carbs and a couple days a week he will have 2 beers, 3's the limits. Most times he doesn't even want 3,1 or 2 is just fine.
    I kid him when he wants to get too radical, 'ok fat liver, when you want to have cirrhosis'.
    Eating for our health is not always easy.

    LOL, Tony I could smell that plus too much onion powder I put in my avocado.

    Today will be bean wraps and whatever we decide to add.

    I can have anything I want, Marie. I have no dietary restrictions other than the ones I imposed on myself, trying to keep my A1C from creeping up. I'm sure I could have rice but for now I'm avoiding high carb foods. (I have never liked brown rice for some reason.)
