Any type of dry or canned beans are a budget stretcher for sure, Kate. Back in the day we ate plenty of "soup beans and cornbread" ( a pot of some kind of dry beans with a bit of bacon seasoning). That is a cheap way to get some protein and full bellies for just a little money! :D Now we eat beans because we like them, but there were days that we ate them because they were cheap.

I have some rotisserie chicken in the freezer that I need to use up, so I'm going to try making Chicken Ala King for supper. Probably serve it over rice with a salad or green peas on the side.

I should have added ketchup. The sandwiches were disgusting. I think the leftovers are beyond being rescued. Part of it was my fault. I forgot to drain off the grease after I browned the burger. But I don't think it would have mattered all that much.

When I make beef Patties ….as we call rissoles ….. I use the best beef mince I can buy ..and I buy it from Costco
Yep you have to buy a 2~ 3 kg pack, which is very reasonable in fact it’s half the price per Kg , than Coles or Woolworths
and it tastes like beef mince …..unlike other shops who’s mince tastes like it’s scraps outta the dog meat bucket

When I l make beef Patties use about 1/2 kg mince a cup and a bit of FRESH breadcrumbs …not that sweepings off the floor stuff ya buy in shops …:(

Onion / fresh parsley / fresh mint / garlic / salt and pepper and of course egg it makes the tastiest Patties …..that makes enough for 2 meals each ..very economical ..nice and tasty …..DH used to make himself Patties ( before I met him in 1986 ) but he used grated potato instead of breadcrumbs ….. one day he mentioned …how he made them while I was making our tea …..so me being me …:p said well my dear …why don’t you make some …and he did ..then said oh …they are bland and tasteless without the ingredients I add ……..he’s never said anything since
    :p
I use very little oil ….. ( olive oil ) when cooking Patties ..and I use a grill pan so they are nice and brown without burning so they get a caramel like crust on them …think the secret is heating the pan before adding the meat…..once they have browned I put a lid on the pan to finish cooking …even tho the pan is square ..I put a round glass lid over meat till cooked

We always have ours with veggies ….and every now and then I’ll make a hamburger then I make the Patties larger ..same mix tho

The better half is helping our son rebuild his garage this week (the one whose house burned last fall). Since he's 1.5 hours away and never knows what time they will "knock off" in the evening, he will pick up a burger or something on his way home. I'm having a peanut butter and orange marmalade sandwich on homemade bread. :D

Made an omelette for our meal last night , I can only eat what I call “light meals” now days

Used mostly veggies / parsley out of garden in addition to adding bacon to the onion / parsley / tomato / tomato ( precooked before adding )
pre cooked the fresh silver beet as well

I like omelettes for dinner. I was making asparagus & provolone cheese omelettes pretty regularly.

Outback. He had a bone-in strip steak with baked potato and salad, I had a prime rib sandwich on a toasted baguette and fried mushrooms.
