What's For Supper?

    @Janice Martin That is a very simple Chicken pot pie to make using leftover chicken or turkey...or even beef.

    All you do is mix a can of cream of mushroom soup, at least one cup of diced leftover chicken (I usually put at least two cups) a package of thawed out mixed vegetables, seasonings to suit your taste buds. Mix all of that together and put this mixture in a casserole dish (8x8) Then mix on cup of Bisquick, 1 egg, and one half cup of milk (more or less), then pour this over the top of the mixed veggies, chicken, and soup mixture. Put it in the oven at 350' for at least 30 minutes and you have that chicken pot pie that I showed you in my picture. :) Since my husband can eat almost half of one of those pot pies at one sitting...I would say he loves it.

  2. That's basically the recipe I use! And yours still looks much tastier!
    The only difference is I use either cheese & garlic complete Bisquick, or sometimes corn muffin mix.

    I was thinking: does this forum have a section where we can share recipes? if not, it'd make a nice addition.

    This is the recipe I use but I looked at their picture and the one I shared of mine...and mine does look better. Must be because I put more chicken and spices in so the biscuits aren't taking over half the pie. Also it's probably my pretty blue casserole dish. ;) I think this is the part of the Forum we share recipes on. But you could look for a recipe sharing tread here...or start one of your own Janice. :)

    Yesterday I used a pound of asparagus from the garden and made the Ginger-Chicken-Asparagus stir fry. This time I added some cashew nuts. The last pint of strawberrys from the freezer was dessert.

    That sounds really yummy Sheldon. Yesterday, I had left over tacos. They were very good. I added a little sour cream to the toppings, and had a bit of lime squeezed over the meat mixture. They were some nice looking tacos, I must say. Today I am doing some baked fish with corn. The fish is supposed to be artisanal in some way, an Italian herb blend, so we will see.

    That sounds yummy, @Babs Hunt. I make pot pies sometimes, but I don't think I've ever made one with biscuits on top in a casserole dish.

    I finally ate some 'real' food last night. I cooked up some chicken thighs (just brushed them with a little olive oil and baked them in the oven with the usual rosemary, thyme and poultry seasoning) and had one with green beans. I'm still mainly eating bland foods, but am going to start mixing in some other foods. I've been wanting to make biscuits, so might make some biscuits and gravy, which should be bland enough for me right now, as long as I don't use too much pepper.

    I made a very similar recipe to this Babs Hunt, except I got it out of a Costco cookbook. In general, I don't like their cookbooks, because the recipes require too many expensive ingredients, and are a bit complicated, but the chicken pie recipe was really pretty easy, and didn't require a lot of ingredients.

    I made the best ever meat ball stew yesterday. :) Along with the meatballs I added potatoes, corn, and green beans to it. Served it over rice and with some honey mustard coleslaw. I love it when I just throw things together without a recipe and it comes out really good! Anyway, it was so good I decided to have some more today....and it was still just as good as it was yesterday. :D

    I am working on the food-combining idea; and have made it though a whole day so far. It is supposed to be so much healthier and better for our digestive system. When I read how wRong-combining can cause a lot of digestive problems, and why that happens; it seemed to me like I should at least try to learn to take care of my health as good as I can.
    This morning, I had raw broccoli with sour-cream ranch dip. Either fruit or veggies are recommended for breakfast, and since fruit has more carbs, I chose to have veggies. Fats can go with anything, so the sour cream and veggies are allowable.
    Lunch was a whey protein shake, and tonight I made sauteed green veggies and some of the leftover chicken from last night.
    Tomorrow is a gym day; so I will skip breakfast, and then have lunch when we get back home. Exercise is supposed to be more beneficial if I do it on an empty stomach, according to the book.

    What brand of whey do you use? The only ones I've seen at the store have aspartame in them.

    We have Body Fortress Super Advanced Whey Protein, @Sheldon Scott . It says aspartame free. It does have sucralose , but it is way down on the list of ingredients so there can't be very much in there. The protein drinks aren't sweet unless you add fruit. The carbs would come from the maltodextrin, but that is a slower-digesting form of sugar.
    We got our at Sam's club; but I think that Amazon carries this brand as well. It only has 6 grams of carb per sserving, and part of that is fiber, and 2 grams sugar.

    I'm still on soft foods for a few more days, so I loaded up on yogurt, cottage cheese and the like when I went shopping, but I also picked up a few pot pies and small frozen dinners to tide me over until I am feeling energetic enough to cook again. I've got some meat in the freezer that I'll defrost when that time comes.

    We spent most of the afternoon mowing. When we came in we each had a very large root beer float. It was so good.

    A small serving of something disgusting looking and totally tasteless unless I liberally douse it with ketchup. I'm on a diet.:(
