Honey Cornbread Muffins

    It recently occurred to me that I've never made cornbread or cornbread muffins from scratch. I think the reason is that the mixes are so inexpensive and easy to use, that there just didn't seem to be a need to bother making a recipe from scratch. I

    seem to be making a mental baking bucket list though, so I decided that I want to make either the bread or muffins from scratch though, and I think this is the recipe I'll use. http://www.foodnetwork.com/recipes/patrick-and-gina-neely/honey-cornbread-muffins-recipe.html
    I'm always pleased when I find a recipe that calls for only ingredients I already have on hand, so I might make these muffins this weekend.

    I made the muffins yesterday, and they came out very nice. I think if I make them again, i'll cut back on the salt, or leave it out entirely, since I used salted butter. Or, I'll just leave it in and use unsalted butter, depending on which I have more of (salted or unsalted butter.) I don't mind salt, but since these have honey in them, I'd just prefer to let that shine though and not be overpowered by the salt. Other than that, they were delicious.

    I have never made cornbread muffins from scratch either. Like you said @ Diane Lane, boxed mixes are so cheap why would you bother with anything else? however, the flavor and the fiber imparted by cornmeal would probably be far superior. I don't have any ground cornmeal, but I am sure it would be easy enough to obtain. As we sit here, I am trying to figure out what to make for supper. I think the choices are polish sausage with potatoes and veggies or Mac and cheese. It is a beautiful day, and I could grill outside..Since it is so nice...I might go with the sausage.

    And, homemade cornbread muffins would go with either :D. I actually have a few boxes of Jiffy cornbread muffin mix in the pantry, but as I mentioned, I seem to have some sort of mental Baking Bucket List. I've been wanting to try making things from scratch that I usually buy or make from a mix. I know homemade usually tastes so much better, so maybe it's a matter of curiosity. That's why I picked up the masa flour when I saw it on sale, so I could try the corn tortillas, but of course that didn't work out. I still want to try making flour tortillas. I've seen a few recipes, but I haven't decided which one I want to use.

    For sure, I think baking from scratch is good, but I don't do much this time of the year. It was cool last night though. It went down to 56 so that was fun. It is pleasant right now..unusual for this time of the year, because even though the air temp is pretty warm, the humidity is low..so that makes it really nice. It doesn't get better than this, this time of the year. I am going to go down to the lake in a few minutes.. It will be a nice day for swimming too.

    Take some pictures and post them. I'd love to see the lake and the area where you live. It won't be cool here until late Fall, if then. This morning is bearable, but that's because I had the AC on a while ago. I'm going to sit on the balcony for a bit and let the cats romp around, while I have some tea and read a bit. I think it's going to be another hot week, so I don't have any definite plans to bake, although I might cook something for dinner on the stove top. I guess I should bring my crock pot out of storage, since it doesn't heat up the house as much.

    Yes, I might. I am having some technological problems right now with my photographic equipment, but I really should. I have thought about selling pics online actually, because this is a very scenic area, but I hope to move. It isn't really working out for me, I would refer to it, as beautiful but isolated. It isn't actually a great place for a single person to be. So far, we haven't had much of that hot weather that is in other parts of the country, but it will probably get here eventually. You just know it!!!
