What's For Supper?

    I'm about to make hot cakes and fried bacon, along with huge cup of hot coffee.

    It's chilling here!

    I just had dinner...I hadn't planned this, but I suddenly had a bit of a craving for Fish stew/soup, and I didn't know if I had the ingredients to make a really good one on the spur of the moment

    So I took some good quality mixed frozen fish pieces from the freezer...

    Fried off some finely Diced onions, carrots, sweet potatoes, organic mushrooms and celery...Added 1/2 a Jar of Tomato sauce, with 1/2 a pint of organic vegetable stock...

    sweated off the veggies..added the tomato sauce and the stock...grinded in some Black pepper and chilli mix granules.
    Cooked it off for 15 minutes...then added the fish pieces..and cooked through...for about 8 minutes on the stove top

    Total time from prep to Bowl...25 minutes....!! Yummy.:D..and I still have a whole load left in the fridge now for tomorrow.

    Not bad for something I did on the complete spur of the moment!! :D

    All this talk about bacon. I just had a bacon and tomato sandwich. No lettuce. I don't like lettuce on my BT If I had some I'd put some avocado slices on it..

    Just coming back from visiting my sister, who packed my tonight's supper, which I'm reheating now; Cuban-style picadillo with Mexican (corn) tortillas :rolleyes:

    My wife cooked a pork roast in the pressure cooker, shredded it and we had pork burritos for supper. Plenty left for more burritos or BBQ pork sandwiches.

    We were in the wake of a cousin yesterday afternoon and we lingered until we left by 8pm. On the way home, my husband and I agreed that we were both not hungry so we didn't buy anything (could be a sandwich in the drive-thru). Upon reaching home, I boiled 2 eggs as a safety in case we go hungry. But it was almost bedtime and I was preparing to retire when I heard my husband in the dining area.... eating the egg. And so I also ate my share. That's our grand dinner which I'm sure would make me lose an ounce of weight.

    Today we're have 6 ounce ribeye steaks and twice baked potatoes. We usually buy normal sized steaks and cut them in two but I saw this box of ribeye steaks in the store that are 6 ounces each so I bought them to try. They look pretty thin but we'll see how they turn out.

    New recipe for me tonight.... Filled Meatloaf Squares. Meatloaf, my all-time favorite comfort food!

    What's it "filled" with? Mashed Potatoes. Sounds like fun if nothing else. :) Oh, and a rather strange (to me at least) ingredient in the meat mixture instead of bread crumbs or oatmeal.... it's crushed Rice Chex. I'll just serve corn on the side and hope for the best!

    My goodness Corie, one egg the whole day? Maybe I should do that once a week so I could enjoy a few more things I usually have to deny myself. Hmmmm.

    I'll be tossing a small pork roast into the crock pot with some seasonings and a little bbq sauce. GS likes bbq sauce, I tolerate it. Looks like it will be corn and oven baked "fries" for sides.

    I have a 2 lb. bag of cleaned shrimp in the freezer. I might boil a few for myself, maybe then toss them in garlic butter. GS hates seafood, luckily for me?

    @Ruby Begonia , could you tell me how long to keep that pork in the slow cooker? I've never quite trusted pork in there... but I'd be willing to try. I've done turkey breasts that turn out perfectly every time, though, so not sure why I've hesitated. The tenderloins always look good at the store, but I rarely buy them.

    I've just had Fish Pie...made with Haddock, Salmon and King prawns and Spinach with a white sauce and mashed potato on top... ( no butter or cheese in the mash just a little bit of plain fat free yoghurt ) it keeps it low fat, and it's just as delicious!! :D

    @Ruby Begonia, that one egg took care of our dinner although we had a sumptuous lunch and a mid-afternoon snack. When at home and feeling lazy, sometimes we just cook soup - the Chinese style that includes an egg. It's a good meal with crackers or biscuits. We don't have stocks in our freezer, not even hot dogs. The only food in our fridge are the leftovers and dried fish. We do not buy meat for the freezer because we prefer the fresh version. So when we need fish, we go to the market. Likewise with the chicken and pork and beef.
