Mmmmm, cookies. I need to go see if I have a bag of fresh coconut; I want to make one of those "crustless" coconut custard pies.
You remind me I miss the church brunches and events we had. I'm part of a 3 Church Charge, meaning there are 3 small churches who share the cost of a pastor, and the guy (or gal) is a circuit rider. We are really like one congregation that meets in 3 different locations...people are tight. Each church's events (or repairs) are everyone's events (or repairs.) So every year there are 3 Homecomings, 3 Christmas Events, 3 Summer Fundraisers, Cookie Swaps, etc. (In fact, there was supposed to be a Homecoming party today.) There are some good cooks around here. I love me some homemade coconut custard pie. And some lemon meringue pie. And some apple pie...etc etc etc. I never bake that stuff because I do not need to be eating an entire pie all by myself...and I would.
It's still cool and dreary, so I've got a pot of homemade chili simmering. We'll have grated cheese, chopped onion, sliced jalapenos and Fritos to go with it. (I like a squirt of mustard in mine. )
Pulled pork sandwiches, cole slaw and fries. I have a pork roast seasoned and simmering in the crock pot; I'll "pull" it later and add Sweet Baby Ray's BBQ sauce. ETA--instead of cole slaw and fries, I made potato salad. Carry on!
