Muffins

    We love muffins at my house,,, sweet or savory,,, it does not matter. Yesterday I made bannana/cranberry/walnut muffins and they were so good hot out of the oven with butter and a nice, hot cup of coffee.
    What is your favorite type of muffin??

    Hi Joyce, I haven't been much of a muffin eater, but you mentioned savory muffins. I'd be interested in those, aside from the usual corn muffins. What other kinds?

    That sounds totally delicious, Joyce! I used to eat muffins more often than I do now... but then I found out the calorie count and it kind of took the joy out of it for me, though. :) That said, I still pick one up at the Farmer's Market once in a while.. local Amish ladies make them, and I can't resist. My favorites are Shoofly Muffins and Fresh Peach Cream Cheese Muffins. Oh my!

    I have making a lot of the savory muffin meals, though.. it's so much fun! Shepherd's Pie... many breakfast muffins with eggs and bacon, etc. I've done Lasagna Muffins and.... well, a number of them, and mostly low-cal recipes.

    But now you have me thinking about a Shoofly Muffin. :D

    We usually pick up a couple blueberry, and a couple banana nut muffins at the bakery.

    Now that you mention it, @Joe Riley , I wonder why on earth I can't find banana nut in my area?! It seems like one of the basic flavors that would be popular! Hmmm..... I may have to ask at some of the bakeries.

    I sure wish they'd come in additional sizes to the "jumbo" that everyone seems to sell now... I know I could (and usually do) cut them in half when they're jumbo, but they dry out so fast that way.

    I mix Betty Crocker banana nut and chocolate chip muffin mixes and add one or two ripe bananas and extra chopped walnuts to the mixes along with a litte extra sugar. They are simple to make but delicious. :)
