Will Be Roasting My Duck!

    Thawing in fridge since Sunday, I will roast it tomorrow. Haven't eaten duck in many decades, my wife's family never ate it, and my mother roasted one 3 or 4 times a year, either of festive occasions or some Sundays. A large duck can only serve 3 or 4 HUNGRY people, and we always had a big ham along with it, though never two different poultry, or two ducks.

    I have never roast a duck, and my wife vows to give me as little help as possible (know not why!). So tomorrow, I'll document my progress. Internet recipes declare it impossible to goof-up making duck, no matter the way prepared! Hope they are right!

    I don't think we ever had duck at home when I was growing up. For as long as I've been cooking, and for as much as I go out of my way to try cooking new things, I have never roasted a duck. Other than the occasional Peking Duck at Chinese restaurants, I think the only time I had it was as a kid at a long-gone restaurant outside of DC (although I might have had goose.) I recall an episode of Martin Yan's show where there were ducks hanging in the market drying out...they literally inflate the duck to pull the skin away from the meat so it dries out & gets crispy when cooked.

    So what are you gonna put on it? I know from my Peking Duck dinners it can be extremely rich ('cause of the fat content.)

    My dad used to go duck hunting when I was a kid. I'm not particularly fond of duck, but if that doesn't work out you can always try a meatbird, Frank. :p

    By law, it's gotta be labeled that way if it's sold in a vegan grocery store.

    It'll cook up no prob Frank, just follow the pkg. directions. It should have included a fine orange sauce to compliment towards the end
    I believe. Enjoy.

    Yes, there is said to be an orange sauce included; I haven't yet removed the plastic wrapping, per orders from my wife.

    Ah, but tuned in tomorrow, I will reveal the real risks I'm taking, by using unconventional means!

    Dark meat, kind of greasy with skin very fatty (of course that's how they float)

    Teal duck is my favorite and I have cooked them and enjoyed their light tasting meat many times in the past. I never roasted them though...cooking them on top the stove with a gravy is how I enjoy them. Enjoy your duck Frank
