    I'm dragging anchor this afternoon so I'm going to toss some wings in the air fryer and make cole slaw.

    The same thing I had for lunch, cottage cheese, and ripe peaches off the neighbor's tree. I may mix it up some and use plain yogurt instead of cottage cheese, but vanilla ice cream is also an excellent option with the peaches. So many choices and only three hours to decide. :eek:

    It’s a plain soup but we like it. :) You can add other spices to suit your taste. I usually use a roast that I cut up into bite size pieces, or you can buy stew meat that is already cubed. You can use another cut of beef and cube it as well. Depending on the toughness of the meat, it could take a couple of hours of simmering to get it melt in your mouth tender.

    Beef Noodle Soup

    1 pound beef, cubed
    2 Tablespoons of olive oil
    1 cup onion, chopped
    1 cup celery, sliced
    1 cup mini size carrots, sliced
    4 cups beef broth
    1 cup water
    8 ounces egg noodles, or more
    salt and pepper to taste
    1/2-1 teaspoon teaspoon fresh thyme
    2 Tablespoons fresh Parsley, optional
    1 bay leaf

    In a large stock pot over medium heat, add the olive oil and cook the stew meat and onion until meat is brown. Add the salt, pepper, carrots, celery, thyme, parsley, beef broth and water. Cover with a lid and simmer on low until meat is tender. Turn heat up to bring to a boil. Add the noodles to the pot and turn heat to medium; cook until noodles are done.

    There's nothing quite as basic and as good as beef & noodles. I often do mine in a pressure cooker. My problem is that I have a terrible time recalling what each cut of beef is like.

    Sirloin roast or steak is usually pretty tender. Chuck roast can be a little more tough. I really don't know what type of beef they use in the store for making their "stew meat" though because I don't normally buy it.

    Leftovers from various lunchs this week. I meet with my doc to review my latest endoscopy this morning . She wants me to put on some weight . I told her, I either cook a good meal each day or jaz up leftovers, I'm at a loss.
    Bless her heart, she leaned in and real sheepishly asked............have you ever considered smoking THC? :eek::D

    my hubby was butcher. stew meat can be made from any cut of meat. brisket is not a good one because it takes to long to cook. we never buy stew meat,cheaper and better cooking with a chuck roast. i have never had a tough chuck roast.
