I should be very healthy, then. I like all kinds of squash. Even squash pickles, Spiralized zucchini sautéed in butter with pesto sauce is one of my favorites.
Winter squash is one of the foods we consider "survive the winter" foods, along with potatoes. It took some years to learn to grow them here, but most years we have enough to last the winter--both summer as pickles and relish, and winter as storage in a cool place.
I love summer squash varieties but I've never been a fan of winter squashes. Yellow squash or zucchini sauteed with onions is one of my favorite side dishes.
@Beth Gallagher , them's good eatin'. How about yellow squash cooked on the charcoal grill? Get them hot, rub them with butter, sprinkle them lightly with garlic salt. Turn them over and do the other side. Yum yum.
Just popped zucchini (from the garden) bread into the oven. No loaf pans so used small glass casserole like dishes.
I never made zucchini bread. We're up to our ears in zucchini so I guess I need to find a recipe for it.
Oh when I lived in San Jose for a 5 yr stint, I had a gf who was the Queen Zucchini bread maker. I like all squashes, I like all veggies.
