I'm not a cook and I don't play one on TV. I make casseroles and freeze it in separate servings (I live alone.) I liked the casserole when I first made it, but the reheated version was very bland. So, I bought a different Italian spice mix from what I used and I bought a bottle of red cooking wine. My plan is to mix the spice and the wine together then pour it over the individual casserole serving (after defrosting) and put it in a pot and let it slowly warm up. Will this work? How much of the spice and wine should I use? If I make this again, how much red wine should I add? Thanks.
If you just drink the bottle of wine while the casserole is heating up, the casserole will taste fine……. Easy-peasy !
When adding wine to a dish, it should cook long enough for the alcohol to evaporate or it will add a weirdness. I would probably add some (more?) cheese to the dish; everything is better with more cheese. Some things are just better when eaten fresh. I put some vegetable beef soup in the freezer knowing full well that the potatoes in it will be mealy when reheated, but I just couldn't throw away perfectly good soup.
It actually worked! I didn’t use the wine, though. I let the casserole serving defrost during the day then put it in a small skillet and spread it out. I added water, salt, pepper, Italian season and some extra oregano and let it heat up slowly. It tasted good!
I started to get off pasta dishes some yrs ago but did a good job of consuming them all in early life...and I no longer drink or buy any wines which I did for a lot of years.....So I refound the Stouffer's frozen lasanga and buy it on occasion, tastes prettty good. It's a small portion but that is good and I don't overeat. I think I attempted making lasanga yrs ago and it's work....
