Chicken Tacos. No grilling for us on this 4th of July, since it has been pouring down rain off and on today. Soooo- I had most of the fixin’s to throw together some tacos, except the wraps. I sent the Mr. out into the wild to hunt for the tortilla wraps while I gathered and prepared the taco filling parts. Win!
Homemade pizza (Italian sausage, mushroom, green pepper, black olives, red pepper, onion) and a blueberry cobbler with vanilla ice cream for dessert.
We stopped at a Taco Bell on our way home this evening. It was "OK" and at least I didn't have to cook.
Taco bell, Mac Donalds, Burger King, KFC...I am not sure if I've become more discerning or they have all just gotten worse over the years. It started with Burger King going from 'flame broiled' burgers to some mystery meat with smoke flavoring.
Today it's Popeye's chicken, mashed potatoes and cole slaw. The hubby volunteered so who am I to disappoint him? We will eat in front of the TV, awaiting that first glimpse of Jim Cantore.
I'll have to dig through the pantry with my flashlight and figure something out. Probably Spaghetti-O's or some other gourmet treat. I'm not opening the refrigerator or freezer until we have the generator running.
Using up miscellaneous fridge veggies, so we had stirfry. I was heavy handed with the soy sauce and we have been guzzling water.
Lots of sandwiches and "convenience foods" this week. Yesterday we had rotisserie chicken and today we'll have tuna salad. Stupid power outage.
Yesterday I bought a couple of chicken tenders from a Stop 'n Rob that makes really good fried chicken (not available on Sundays.) The "tenders" are really large deep-fried boneless chicken breasts for only $2.50 each. So last night I made a huge salad with lettuce, red onion, hard boiled eggs, a chopped up tender, bacon bits, shredded cheese, croutons and homemade Honey Mustard Dressing.
