Low Carb: What Are We Eating?

    Fish.... we eat fish at least 3 times a week.. Mostly salmon fillets or tilapia fillets..
    A salad goes well with fish...
    Frozen blueberries in heavy cream...
    Pot of tea..

    My homemade turkey burgers on the BBQ, frozen...
    Steamed fresh baby carrots from the garden served with butter.. They are actually sweet..
    Pineapple tidbits served over cottage cheese..
    Pot of tea....

    I made a meatloaf using minced chicken..
    There is enough leftovers for at least another meal each..
    Steamed broccoli and mini baked potatoes..
    Frozen blueberries in heavy cream..
    Pot of tea...........

    Admire your diligence Steve, I do try and cut carbs, but guess I am worn out all it entails to make a meal of any kind nowadays. Like reading your menus.

    Thanks Hedi... I also am getting up in years and am having some difficulty in cooking a good meal like I used to do.. Carbs are not necessarily my big thing since I had 2 open stomach operations a few years ago, but I still watch them to keep my weight level..
    I am still at the 175 pound mark after a few years..
    We eat fish at lest 3 times a week.. Chicken a few times a week.. Minced (chicken or turkey) in different ways a few times a week.. Almost never red meat and absolutely NEVER pork or ham..
    My method of cooking is getting simpler as time goes on.. No more fancy meals.. Just plain wholesome good food..

    Hamburger steak made with minced chicken.. Gravy as well..
    Fried onions, baked mini potatoes, peas..
    Frozen blueberries in heavy cream..

    Breakfast is
    Oatmeal, cinnamon, Blueberry's, Strawberrys, yogurt, frozen coconut pure fruit bar, strawberry pure fruit bar.


    Steve have you tried brown rice and eggs. I cook for Jake and I. Much of mine is low carb.
    I use lots of eggs for protein to workout.

    2 cups brown rice, 8 eggs,
    1/4 c onions.
    Sauté eggs in lots of butter, pour in eggs, scramble then add rice.
    I also add hot sauce.

    Marie............. Thanks for the idea.......... sounds good except for the hot sauce......
    We do have oatmeal (porridge) about once a week.. I use splenda brown sugar and cream..

    Fish...... Tilapia fillets lightly breaded and pan fried in butter and lemon juice..
    I made a potato/devil egg salad,.... steamed broccoli..
    Frozen blueberries in heavy cream.. Let the frozen fruit freeze the cream like ice-cream..

    I'll eat a open sandwich with Pumpernickel bread 1 piece of bread, with slice of meat or a burger, onions mayo. Club Soda for the fizz or just water.

    Marie... Pumpernickel bread is awesome.. I buy it all the time and love it...
    I like making french toast with it.. Great taste..

    Supper tonight was... I looked in the freezer and found a bag with 2 chicken drumsticks.. I also found a bag with 2 chicken thighs, skin and bone on.. I thawed them, cut the fat and skin, and put them on the BBQ after a slight dry seasoning..
    Steamed carrots and parsnips pureed with butter.. Baked mini potatoes..
    Pineapple tidbits with yogurt..
    Pot of tea..

    I eat a lot of coleslaw full of carrots. Steve thanks for reminding me about the steamed carrots, time for us to have some.
    Grocery shopping today they had chicken thighs starting at $5.99 breast even more. I bought 4 wholes Green Wise chickens at $2.49lb. I'll cut them up and save lots of money on meat.

    Marie......... WOW !!! ... Where are you that you pay $5.99 for thighs?? I buy chicken thighs boneless and skinless for $2.79 a pound and B/S breasts for $3.99 a pound... Drumsticks, legs, or thighs with skin and bone is $1.99 a pound... I find that a bit expensive...Minced chicken or turkey is $2.49 a pound (450g)...
