    These are addictive. I keep them in the freezer...they don't freeze solid, but they're really good chilled. And freezing stops them from spoiling.

    Apple Squares
    1 cup sifted all-purpose flour
    1 teaspoon baking powder
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon

    1/4 cup butter or margarine, melted
    1/2 cup packed brown sugar
    1/2 cup white sugar

    1 egg
    1 teaspoon vanilla extract
    Touch of almond extract

    1/2 to 1 cup chopped apple
    1/2 cup finely chopped walnuts

    2 tablespoons white sugar
    2 teaspoons ground cinnamon


    Preheat oven to 350 degrees F. Grease a 9x9 inch pan.

    Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.

    In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth.

    Stir in the egg and vanilla.

    Blend in the flour mixture until just combined, then stir in the apples and walnuts.

    Spread the mixture evenly into the prepared pan.

    In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.

    Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Do not overcook…they need to stay moist.

    Allow to completely cool in the pan, and cut into squares. If they don’t completely cool, the cinnamon/sugar topping will not set up and it will not stick.


    Options
    Triple the recipe except for the topping. Put in 16” x 9” dish.
    Double the recipe except for the topping and use the 9x9 pan so they are thicker.

    I thought I'd mention this...

    I've always made this manually with a wooden spoon. Today I got out the hand mixer, mainly because it's so difficult to fold the apples & walnuts into the stiff batter. I used the mixer for every step. They finally cooled off and I just tried them...for some reason, they came out missing flavor this time. I don't know if I over-mixed it (I tried not to) or if there was something else going on. I actually went back to read the recipe, thinking I must have left something out (I didn't.) One half an apple yields about 1 cup chopped, so I ate the other half and it was flavorful enough. Using the electric mix was the only thing that changed.

    I thought I'd point this out. It seems things need to be "just combined." The last couple of times I mixed the apples & nuts in my hand in an effort to get them thoroughly incorporated because it's almost too stiff to do this with a spoon. I'm gonna go back to doing that...I'll not use the electric mixer again.

    Thanks, will keep that in mind. Though, i have a bunch of unripe apples and your recipe calls for a small qty. I was thinking of making apple crisp or just stew them for my morning oats.

    Apple Crisp!!!!! My favorite!!!!!!!!
    Gotta have it hot with vanilla ice cream...even milk will do in a pinch.

    I figured when you said you had a crop coming in that making these would not put a dent in them...especially when mixed by hand. It really sounds like applesauce and apple butter time. But you can only eat so much of those.

    I can smell it!!!

    The only thing we had when I was a kid were a couple of plum trees. We (the young ones) would eat them, but I don't recall cooking them down or anything. Actually, they were kind of an annoyance, since they would rot on the ground everywhere.

    The apple crisp turned out good and It smelled good too while baking

    Talk about rotten fruit on the ground, i am tired of the cleanup. Thanks for the tip on the squares,i would have used the apples stewed for my morning porridge.
