The other night we came home a bit late and surprisingly we forgot to buy food for dinner. Instead of going out again or calling for delivery (it was raining hard so delivery is not advisable) we resorted to our life saver, so to speak. The good old Libby's corned beef in the food cabinet provided us with dinner. With garlic and onions to sautee for a minute and adding the corned beef and diced potatoes, a 5-minute wait is good enough to serve it on the dining table. And there we go with our fastfood dinner.
I haven't had the canned corn beef in many years. We cook a corned beef brisket at least a couple of times per year. I think I'll buy a can next trip to the store.
When I was a child I loved nothing more than Corned beef Hash... which in our house consisted of mashed potato, onions and corned beef, mixed all together in one big pot... I hadn't had corned beef in many years...but last week I used a can of Fay bentos corned beef and just sliced some to make sandwiches..... ooooh the heartburn, it was horrible... and it lasted all day I don't think I'll be having corned beef again ..
Being a single parent I always looked for easy and quick meals for my boys but I never thought of corned beef. If I had it when I was younger I don't recall the taste so I don't know if I like it.
I used to eat corned beef on occasion when I was younger, now I just buy a can once a year maybe. It is really good with cabbage. I used to make it for St. Patrick's Day, until my Irish friend told me, they never eat that in Ireland! I might do it anyway, just for fun and I like it. FYI they don't say Top of the Morning to you either. That phrase came from a Rod Steiger movie.
I like corned beef, and also corned beef hash. When we buy it, we usually have it with cabbage, onions and carrots, kind of like a stew. Sometimes, I just buy the corned beef hash and add that instead, because corned beef is almost $4 for a tiny can out here. In a whole soup pot of corned beef and cabbage, that is not so bad, and we will have several meals from that one can; but to just buy it to use for sandwiches, it is expensive. Making it the way that @Corie Henson does is good, too, although we usually would also add mixed bell pepper to the potatoes and onions. We try to keep some canned foods stockpiled just in case of some kind of problem where we can't get to the grocery store. After having to live on what we had stocked up after the tornadoes a few years back, it really made us be aware that this kind of thing can happen unexpectedly at any time. The nice thing about canned foods is that they can be eaten straight out of the can if necessary, and when cooking them is not possible.
Do you mean to say that corned beef causes an unpleasant reaction in your stomach? My husband's problem is his acidic stomach and we had no idea that corned can cause a problem. I'm not exactly sure if it was on the night we had corned beef but he had a sleepless night due to tummy pain, he woke up after midnight with the short burps obviously acid was building up. The gas pain was terrible so he had to take pain reliever. By the way, the way he ate the corned beef is by mixing a small can of beans to make it corned beef and beans. I was thinking it may be the beans but now that you've mentioned corned beef, I guess it may be. That's sad because my husband loves corned beef that's why we never run out of it in the food cabinet. Let's see what he's going to say about this revelation.
Like Corey and Yovonne I keep corned beef in my cupboard too. I make corned beef hash with youkon gold potatoes: mash it together with Himalayan salt & garlic salt with black pepper. This week we added dry parsley flakes too. half a can of corned beef, so I use the rest after thawing cooking it n hanup with onions, potatoes and other veggies I got on hand with rice-brown and white with quick cook barley and sometimes I add black rice with a splash of soy sauce, yum! We too live in a hurricane prepared zone so we keep things handy for quick eating too.
@Corie Henson , yes the corned beef gave me horrendous acidic heartburn . I suffer from a hiatus hernia anyway, but I take medication every day for it which means I can eat pretty much anything again except for onions, peppers, and anything acidic, especially deep fried fats.. ... acidic liquids like lemon juice, cranberry juice or vinegars and any acidic fruits cause a lot of heartburn and acid reflux GERD ...but without the medication there's a lot more food I couldn't eat without it causing horrible acid reflux...such as Chocolate, Beans , high fats, cake and especially anything fried...
