Czech Kolacky (cookies)

    Had a taste for my mother's wonderful kolacky for awhile now, so dug out her old recipe box and found the ages-old hand-written recipe. I had several cans of Solo Cake and Pie Filling sitting around, so picked the oldest, Poppy-Seed! The Solo fillings remain firm in the oven, don't thin out as jams or jellies do, which run off the bakery. Very interesting history behind Solo, business started by a Czech immigrant in Chicago about 1895!

    The dough is cream cheese based, uses baking powder to rise nicely, not light as yeast dough. Here is the finished product cooling off:

    Interesting, Frank. There is a large Czech population in the Texas Hill Country, and bakeries sell "kolaches." They are more like pastries than cookies, and are either fruit filled or can be savory with sausage or ham inside.
