Low Carb: What Are We Eating?

    Last week I was so desperate for a bbq steak, I made it in a light rain. There were some leftover, dry pieces of wood in the grill, thank goodness.

    Supper was something I haven't made in a long time............. SALMON PATTIES ......
    Take a can of salmon (not keta salmon) and remove the bones and skin.. Save the juice..
    add an egg, dried dill, dried chives, salt, and pepper.. Add some breadcrumbs to thicken it up and if it is too thick, add some of the juice you saved.. Make nice size patties (I made 2 large ones) and refrigerate for about one hour (I only waited 20 minutes).. Fry in oil till golden on one side and while it is browning, I added a bit of lemon juice on the top of the cooking patty.. Flip and brown on the other side and add a bit more lemon juice on the cooked side..
    I made a sauce of mayonnaise, relish, worchester sauce, and a dash of ketchup to go over the patties..
    Serve with veggies... I steamed carrots and red potatoes, smashed them with butter..
    S/F jello with heavy cream..
    Pot of tea..
    We thoroughly enjoyed this meal..

    Last night I again had something I don't have very often................... LIVER and ONIONS...
    I bought some calf liver cut a bit thick and I sliced up 2 large onions..
    I never had a meal that I enjoyed more than that..
    Naturally I overate but it was super delicious..
    I like my liver done rare while my wife likes hers done well-done..... No problem there..
    I will try to have liver about every other month..

    Not charcoal grilled, Right?;)
    I make liver pate with onions, mayo and a hard boiled egg or two depending and the bacon I fried the livers in. Chicken or rabbit liver, not beef.

    Mary.. I used to like chopped liver but now I just can't make it as it is very labour intensive..
    Besides, I like my fried liver quite rare with a ton of onions..

    Steamed green beans with sour cream..

    Our friend just came by and brought me about 10 pounds of freshly caught smelts..
    now I have to dress them, freeze most and keep out some for supper tomorrow night..
    Most everyone likes to fry them in oil in a fry pan, but i don't make them that way..
    I lightly bread them in flour and spices, place them on a cookie sheet and broil them in the oven but lowering the rack..I turn them after a few minutes.. I find this method not so greasy as oil frying..

    Fresh from the grocery store.. I find the frozen one too mushy especially when steamed which is the only way I cook my veggies....

    Yup.... I make S/F chocolate pudding and I serve it with either whipped cream or heavy cream...
    Naturally I cheat and use the Jello instant S/F one and I spike it with extra cocoa powder...
    To make it more interesting, I also add a pinch of cinnamon..

    Trying to talk hubby into Dr Berg's keto diet. Tonite I put a flank steak I was saving on the grill after tenderizing it all day. I served it with raw cauliflower florets, olives and our home canned dilly beans. After enjoying the meal, I said you just ate a dietetic dinner! He seemed surprised and said it was good. I will use a few of your suggestions to keep at it. But when I say no cereal, bread, sugar....his eyes glaze over.
