Low Carb: What Are We Eating?

    We went to Sudbury and we went to Walmart where I bought a BBQ chicken..
    I also bought a Caesar salad kit which we had with the chicken.. I like the dark meat and Annmarie likes the breast.. That way we can have 2 meals out of the dead bird..
    For the 2nd day, i made some mashed potatoes and peas..
    There was too much food, so no dessert..
    A pot of tea was very welcomed after that meal..

    Fillets of sole breaded and pan fried in butter and a drop of oil..
    Baked potato, steamed broccoli, sliced tomato...
    Pineapple tidbits with cottage cheese..
    Pot of tea.........

    Sugar is 156!:eek: that is high and now I have to work out real fast, and I don't feel like it at all. o_O

    Supper was turkey bangers (sausages) on the BBQ... I took the casing off of mine before grilling as I am not a big fan of the casing.. I can have a bad day without eating plastic casing........
    A large red potato baked in the oven that we shared.. Steamed and pureed carrots with parsnips..
    I had some overripe bananas that were not for eating.. I made a banana loaf and I added some raisins as well.. it came out fabulous..
    Pot of tea for sure.....

    Sunday.... I took my dear wife out to a local lodge for a buffet that they made for upcoming Valentines Day.. It wasn't bad but not really the type of food we generally eat.. I found everything a bit greasy.. I feel like I had an oil change inside.. Nevertheless, we had a geed time just being with each other..

    Getting out and doing something together is always a good thing, @Steve North , and this is what Bobby and I do sometimes also. At home we are pretty healthy in what we eat most of the time; but when we do go out to eat (which is rarely), then we enjoy whatever food we feel like eating. One meal in a month is not a deciding factor in our health, and like you mentioned, having a good time is important , too.
    We are going somewhere either today or tomorrow for a late BD dinner for Bobby and an early Valentine’s dinner for both of us.

    Yvonne........... You are 100% correct in the fact we were together and what we eat isn't that important considering how often we go out together...

    Supper tonight was fillets of salmon, pan fried in butter and oil.. A drop of oil with the butter keeps it from burning and turning brown..
    A salad with my own dressing...
    A slice of the banana cake I made a few days ago..
    Pot of tea...

    Now, this was a much better meal that I made compared to going out..
    We both enjoyed it very much.. Healthier as well..

    My homemade chicken burgers that I made a ton of and froze them..
    I put them on the BBQ frozen and they come out juicy and very flavourful..
    I never serve them with a bun, only plain as they are a fair size..
    A large baked red potato that we shared...
    Steamed carrots pureed with butter and parsley flakes... For my wife
    Steamed cauliflower mashed with sour-cream for me..
    Frozen blueberries with heavy cream.. Let the frozen berries freeze the cream..
    Pot of tea as usual....

    I made a meatloaf.......... This time I used minced turkey..
    I added some rosemary, garlic, ketchup, a bit of stock, and a package of Stove top dressing..
    Talk about the most delicious meatloaf I ever made.. There is enough for another meal for us..
    Baked red potato, steamed broccoli, slice of tomato..
    Pineapple tidbits with plain yogurt..
    Pot of tea..

    My wife told me this is one of the best meals in a long time..
    Much better than the meal we had out last week..

    Reduces blood sugars
    Is gluten-free and not related to wheat

    So good for diabetic suffering from high blood sugars and more. If you're interested in my magical pancake batch for two, please let me know?

    It's delicious with butter substitutes if you're dairy intolerant as well as regular butter and lovely with Black Strap molasse aka Treacle (in the UK).

    My neighbour has a multitude of health problems so, I'm always finding things whenever she asks for help. I felt it would be beneficial for yous my friends here... Enjoy!

    Hmm. I wonder how easy it might be to make a simple buckwheat flatbread at home. Maybe even partially combined with a whole wheat flour when gluten isn't an issue?

    Less of a pancake, maybe rolled out flat and then "baked" using a pan or griddle?

    I usually use lentils in my fiber cakes, but sometimes I have used buckwheat instead. I think that it would work fine for making flatbread. Just soak it over night (or even an hour works pretty well for buckwheat), and blend it up. You can add some regular flour or you can use flax meal or almond meal, and I add psyllium and usually some chia seeds, and cook it in a pan with coconut or olive oil.
    Since I am doing the low carb, I do not use regular flour, but I do use almond or flax meal.

    Look on youtube for easy flatbread recipes with buckwheat, too.
    This recipe uses buckwheat flour, but I just have regular buckwheat and I soak it and then put it in the blender instead of using the flour and adding liquid.

    Last night I made my homemade burgers on the BBQ.. This time I used minced turkey to make them and they were very delicious.. Naturally I added some herbs and spices to the meat.. I have some left over that i froze for another time..Next time I will serve them with a mushroom sauce and fried onions..
    Steamed and pureed carrots and parsnip with butter..
    Sliced banana with heavy cream..
    Pot of tea...
