Seems all grease smokes fairly soon these days, so I'm going to use my cast iron corn stick and also muffin pan today. I'll let you know how it turns out. Think I'll set the over on 425.
They are in the oven, but since I had to ad a couple corn sticks to fill pan, I set oven on 460. 3 cans of tuna just has onions, self-rising flour,3 eggs.Brushed tops with olive oil. Hushpuppy has self-rising corn meal, buttermilk, finely chopped onions 1 egg.
I'm eating it but not worth the work, Tuna patties stuck to pan, Jakes taking a picture now, put it up later. Hush puppy batter just got thrown into a cast iron pan and put into oven, forget about corn stick's, pans are occupied with stuck on tuna patty crust. In other words, it was not a good idea. I did get 3 cornbread sticks from leftover space of tuna patties.
Positive side of this is, no smoke from stove top oil, Eating scaped out of pan tuna pattie with a fork isn't too bad. Although I did find out hushpuppies in corn stick pan aren't as good as deep fried.
