It takes 3-4 minutes per pound to fry a turkey. Usually the smaller birds (less than 14 pounds) are the best size to fit in the fryer.
My wife likes to use a roasting bag, but that is something she picked up after moving here. Our #3 son is something of an amateur chef. The last time he was here, he roasted a turkey in an open pan wrapped in bacon. He started it in a hot oven and lowered the temp after about 30 minutes I think, then turned the turkey over part way through the cooking process. It was probably the best turkey I have ever eaten. That son's cooking is still talked about by the people he used to camp out with in the winter. He could make amazing meals in a couple of Dutch ovens over an open fire in the snow even.
"Lowering a frozen turkey into a pot over-filled with hot oil." That's like NBC rigging a truck with explosives to show us how dangerous the gas tanks are. Next show us someone putting a frozen turkey in the oven, cooking it the normal time and giving everyone in the household salmonella. "Ban Home Cooking."
I knew of one person who did that here. It was too cold outside, so he put a frozen turkey into a pot of hot oil and lost his house. I don't know if it was overfilled or if he had ever done it before. I didn't know the person as it was a story on Anchorage TV.
