Kate, I have really, really tried to like eggplant but I don't.

I made eggplant “steaks” couple of nites ago….. grilled thick slices one side …. turned over and added precooked bacon (chopped) …… added to tomato pasta sauce with added veggies like grated carrot ( pre cooked before added)
cooked sweet peppers ….topped with cheese grilled under griller

I never used to like …now days a make a 100 % veggie lasagne using oven roasted ( on trays ) ( spray wit olive oil ) slices of eggplants / zucchini
pumpkin ..make a sauce to put between layers very similar to up here ^^^ no cheese sauces ….top all layers with some of the tomato mix .,.add a fine layer of cheese ……the flavour is very nice
