    Who knows @Marie Mallery people went crazy canning during lockdowns in Australia but I guess lots of that canning stuff has been discarded now

    I've only had a couple of jars break while canning them in the canner and it was because the temperature fluctuated too much, so I am really careful to keep the weight, just hissing one or two times a minute now. Never had one explode while on the counter or when transferring them.

    Speaking of canning, I got a lot of dried beans to can and was waiting for the weather to cool down before I could can them. We do it with our All-American canner out on the porch with a tailgate cooker, but it has been too hot for canning for a while. It seems a little cooler lately in the mornings so I need to get it done soon. :)

    We are doing that too, @Jake Smith but we usually put them in soup or stew and not just beans alone. We, of course, can them inside as heat is not an issue here especially at this time of year.

    Don, we just got the beans for storage and put it off but now we do need to can them. Beans and peas too.

    To my knowledge Aussies don’t can dried beans …..are they cooked dried beans or green beans ..if so what do you use the dried beans for ?…..and what type ad bean are they ? @Marie Mallery

    Yeah, you probably could use the extra heat, huh? Down here we sure don't need more heat now. We canned like 65 lbs. beef once and it was great for barbeque sandwiches or just beef or just added some to soup, and made chili. Now it's so high in price we don't even think about doing it again.

    No they are raw dried beans from the grocery.
    We get all the jars heated in dishwasher ready put on water to boil fill the jars half way with beans,salt, fill to one inch headspace. Cook under 10lb.s pressure 90 minutes for quarts 60 for pints. Pintos, green limas, limad aka butter beans ,black beans and black eyed peas,

    Thank you for that @Marie Mallery so how do you eat the beans ….by adding to other foods ?
    I love beans but they upset my gut (Diverticular disease ) cause serious bloating / pain however I can eat a salad made with 4 bean mix and it’s ok if I only have a table spoon of it
    I add capisum / red onion / celery mix up small coating of lemon juice / olive oil a bit of sugar salt and pepper
    it’s delicious ..,I use canned beans
    I will get a can out of cupboard and take a photo

    Yes we put them in soups, salads, and beef bean wraps. I used to love beans and cornbread but past couple decades cornbread is not an option with diabetes. I'd have to lift lots of weight for a piece of corn bread huge workout. Its is worse than a piece of homemade chocolate cake.

    Canning the dried beans is a good way to deal with bags of dried beans that have been on the shelf for a while. If they are too old, the will take forever to cook by normal means, but pressuring them for an hour or a hour and a half and sitting in the brine for a while will bring them back to usable again .

    It is a good way, Don, we do it all the time.

    It helps out to save on groceries and is a quick meal, when hungry, just warm and serve.
