During the past week, I have enjoyed a Chicken Pot Pie, a Turkey Pot Pie, and last night a Beef Pot Pie, all by Miss Marie Callendar!

My husband went to his mom's this afternoon so on his way home he stopped at KFC and got a pot pie for me. YUM. (He had fried chicken; he's not a big fan of pot pies but what does he know.)

Occasionally we make pot pies, I say "we" because we share the prep needed. I make the pie crust & cube what ever meat we are going to use. My wife cuts up the veggies and chooses the herbs & spices. Only veggie not fresh is the frozen sweet peas. It's kinda big since we make it in a 9" glass pie pan. Left over turkey of course gets used. Most often when either of these are on sale, choice petite USDA sirloin or boneless chicken breast.

Obviously control over salt & sugar a big factor.

I love me some chicken pot pie. I guess turkey would taste the same, and I'm not a fan of beef. But it's gotta have a bottom crust. I feel ripped off when I get the ones that only have a top crust. I once tried making my own in the individual round pans like you buy frozen, but they did not turn out very well. I've not made a large multiple-serving pot pie.

My favorite is Marie Callender's. The only thing I dislike about hers and most other brands is there's never enough filling to go with the crust. I cook ahead & freeze individual servings of stuff, so I usually have chicken & gravy on hand. I heat up one of those to augment the pot pie, and toss in extra mixed veggies. That way the crust does not overwhelm it, I can get two meals out of a large pot pie, and I'm eating less crust (fat.)

Since I got a nice convection oven, I always bake them versus using the nuker.

LOL!! I was thinking the same thing after I typed out my comment. Good thing I'm not still living outside of DC...they got 24 hour grocery stores there.

Yes! We like pot pies. I make the small individual ones a few times a year to put in the freezer.

Do you put in a bottom crust? And if so, do you pre-bake it before adding the filling?

Yes and yes. But sometimes I cheat on the top crust.
Marie Callendars had a 4 pack for $10 a while back but I have not seen it at aldis for a year or more.
