As far as my salmon patties goes, I use a can 418g of salmon.. Drain well and put the fish in a bowl.. Remove the bones and the black skin.. mash with a fork.. Add 2 eggs, the green from green onions finely chopped, dried dill, pepper to taste, and mix well.. It will be way too loose so I add some bread crumbs to thicken it up.. That should make 6 fair size patties.. I fry them in butter and EVOO till golden brown.. If I don't have any green onion, I use either chives or parsley flakes..
