Low Carb: What Are We Eating?

    Well, my casserole never came about.. I was busy doing something and by the time I finished, it was supper time and I hadn't even started making the casserole..
    Well, I had to think very very fast as supper time is here and nothing prepared and one pound of minced chicken thawed..
    I took an onion and diced it, 4 huge mushrooms sliced, a handful of broccoli florets, some frozen peas, and fried them in oil in a pot.. I added the minced and browned everything together adding some liquid (stock).. I then added loads of grated cheese, and some herbs and spices..
    cooked the concoction till I thought it was done and served it just like that..
    We both devoured it.. No leftovers at all..

    I made a S/F butterscotch pudding that I spiked with some S/F maple syrup..

    Breakfast was indeed pancakes.... actually they were flapjacks and not pancakes.. I make them large, the size of the large fry pan.. One each.. They are the size of the plate.. .. served with a dab of butter on top and S/F syrup..

    today was another of those totally mixed up days..
    I took out of the freezer a package of B/S chicken breast to make a casserole of some sort..
    Well, don't ask but when it thawed, it turned out to be B/S chicken thighs and not breast....... OK ??? ..... Now what ????
    Think rather fast !!! ........ I breaded them in wheat gluten and herbs and spices..
    Put them in a non stick fry pan with a bit of oil and cooked them on medium heat till golden and then flipped them over...
    I had some coleslaw to use up, so I served it with the chicken..
    I made a chocolate pudding and served it with real whipped cream..

    Well, we had a not bad meal from another mixed up day.....

    Breakfast was the usual.. 3 eggs each and turkey bacon for my wife..
    Pot of Folgers..

    Lunch was also the usual................. A very big kiss and hug which is low carb for sure.....

    tonight for supper I made FISH .... fillets of tilapia, lightly breaded and fried in oil and butter..
    I made my own tarter sauce to go with it..
    Steamed cauliflower..
    Peanut butter S/F pudding served with real whipped cream and sweetened with splenda..

    Breakfast.. The usual of 3 eggs each....

    Tonight (Wednesday) I am probably looking at a BBQ.... I know the weather isn't good, but I feel like a BBQ... I don't care !!!!
    Now, what to put on the grill is another thing... How about some chicken drumsticks ??? Done deal !!! I have a package of 5 frozen..
    After they are done, I will put them in a large bowl and shake them in some BBQ sauce making them sticky and gooey..
    A salad will go well with the BBQ.. Always does... Who doesn't like a salad with a BBQ ......
    Dessert will be S/F jello.. There's always room for jello..
    Pot of tea to wash all that down, will round out the meal....

    BULLETIN !!!!!
    I didn't make a BBQ as it was freezing rain and I didn't feel like it... it was cold, raining, windy, and damp.. Just an extremely lousy day...so, I decided to make some comfort food for supper..
    I took out of the freezer a package (450g) of minced chicken and I made a meat loaf... Great comfort food !!!
    Now, instead of making it in a loaf pan, I made it in a muffin tin making 24 individual small loaves..
    Well, only 2 small ones left over.. We pigged out completely..
    I made a salad with it and that also went..

    I made a S/F chocolate pudding for dessert with real whipped cream.. I spiked the pudding with some cinnamon.. different taste..

    I had one of the almond/flax flatbreads for breakfast topped with an easy-over egg, Along with my Bulletproof Coffee, and that kept me full for most of the day, and tonight , I had a large salad with lots of greens and veggies for dinner and olive oil/vinegar dressing.

    When we go to Wallyworld, I am going to get a package of their Apple flavored crystal light drink mix, and chop up some zucchini and marinate it in the drink powder, so they will taste more like an apple. Next, I will add some of that zucchini mix into my flatbread, and turn it into an apple fritter with almost no carbs.
    I don’t know how that is going to work out yet, but I am looking forward to trying the experiment !

    Today Thursday, is food shopping day for us this week..
    After doing the rounds of different shops, we will most likely grab a bite out for supper...

    Um crystal light has aspartame ...maybe it does not affect you like it does me.

    I had a weird breakfast but it was sooo good! Cooked a brisket yesterday. Cut iff a oz or two of that ..sprinkled with no sugar bbq sause- then 4 rosemary flavored crackers...perfect- o !

    I have read that it affects some people, and not others, but overall, I think that it should be on limited use, regardless. I do use it, but not in very large quantities, or very often.
    I think that drinking a lot of crystal light, or diet pop, or any other drink that is sweetened with aspartame, is not a good idea. But I think that I can safely use a little bit to flavor my zucchini to taste like apples. Otherwise, just using real apples would work, too, because you would only be using a little bit for each fritter.

    @Yvonne Smith ...what is good way to occasionally fry chicken or whatever...with a coating other than flour or pankeo ?
    Can you do that with almond or coconut flour ?

    So excited..my first real try...almond flour cookies...I added butterscotch chips.They taste good, but it only made 9 vs 10 and I had to work to get that.
    I would make these again when wanting a snack of one or two.

    Those look great, Gloria ! As far as using almond flour for chicken frying, I have done it, and thought it was fine. I can’t remember if I just used the almond flour plain, or if I mixed it with some coconut flour, but i think that i mixed the two of them.
    The coconut flour adds a little taste/smell of coconut, but I like that, and it is much lighter than the almond flour, so the two of them blend well together.
    I have found that since I started making the almond/flax flatbread (maybe fry bread is a better words because it is more fluffy than flat), I don’t miss any kind of bread at all, and with all of the protein and fiber, it does not take much of it for me to be completely filled up.
    I pretty much have a piece of it made in some way , either with added cinnamon for breakfast, or with oregano and garlic for dinner, or just plain with butter and an easy-over egg for breakfast.

    @Yvonne Smith ...those cookies are tasty. Mark said they were 'ok' then wanted more...nope you can eat your Oreos:).
    I have been reading about using almind flour for frying. Good to know about the coconut flour...I may do that also.
    I am going to try my hand at the bread soon.
