Yesterday (Monday)I had a doctor's appointment in Sudbury.. After the appointment I went to Wallmart and I bought a BBQ chicken.. We had half the chicken on Monday for supper.. Coleslaw S/F pudding spiked..
Today is a perfect "comfort food" day.. its raining, damp, overcast, and as I write this, I can see some lightning and hear thunder in the distance.. Rain all day today which we need badly.. Perfect day to stay home and make a decent meal for supper.... I will thaw a package of minced chicken, (450g) and make some sort of a low carb casserole using some veggies.. I love those one pot meals... S/F jello for dessert with heavy cream.. We have been skipping our pot of tea after supper but tonight I might make a pot..
Hot like Hell up here.. No time for using the oven... BBQ time.. I had some frozen brochettes that I made using chicken breast that was marinated.. I put them on the BBQ frozen.. They came out pretty good.. Perhaps I accidently overcooked them a bit, but next time, I'll know better...
Still very hot up here but today I made a stir fry on the stove.. B/S chicken breast, onion, garlic, broccoli, mushrooms, and red peppers...... It wasn't too bad as we do have air-conditioning in the house.. The hood fan helped take away the heat as well..
I'm supposed to eat low carb, but I would rather eat a really small portion of baked potato than a sweet potato. @ Steve North Your meals sound and look really good for being healthy food.
thanks Bess.. I try to make my meals different every day and to make a balanced meal while keeping it low carb.. Unfortunately in the heat of the summer, the BBQ seems to win over the oven in the stove... Last time I even made scrambled eggs for breakfast on the BBQ... They turned out delicious.. If you noticed, we don't eat pork or ham in any form.. Very little red meat as well.. which means lots of foul, [chicken and turkey] and fish.. We still eat almost everything except the ..... BIG 5 no-no's....
Today for supper I made my premade burgers on the BBQ.. I put them on the grill frozen.. A salad went very well with those HUGE chicken burgers.. I meal HUGE !!! Approx. 1/3 of a pound each.. Breakfast was as usual.. 3 egg omelette with turkey bacon for my wife and 3 scrambled eggs with some cheese for me.. Lunch... Very low carb... A big hug and a kiss... We don't eat lunch at all.. sometimes a coffee, or a diet pop....
today it was somewhat cooler.. I actually found it a bit cool as I am used to the heat... supper was soul food......... MEATLOAF...... I didn't mind using the oven.. Steamed cauliflower with parsley flakes on top.. S/F butterscotch pudding spiked with some S/F pancake syrup and served with heavy cream.. Breakfast.... The usual for both of us.. 3 eggs each.. Lunch..... Nothing at all..... Drank lots of water all day.... I mean .... LOTS ...

My Veggie Bullet arrives from Amazon today, but I had some zucchini that I spiralized with the little handheld one, and my meal is the zucchini pasta with melted butter and cheese, Italian seasonings, a few small shrimp, and Parmesan and white American cheese. I am looking forward to trying the cauliflower rice and making a pizza crust with it, too.
@Steve North Just wondering where you buy your fish, especially Salmon, and are your packaging laws requiring "country of origin" labeling? Hardly any fish offered here by our big stores like Kroger (Smith's) and Safeway, have any fish at all not labeled "Product of China". I am simply loathe to buy it. Frank
The salmon that I buy is frozen fillets and they are a product of Canada.. Mostly Atlantic Salmon ... I was told to stay away from salmon that is a product of China.. I don't know why, but I do.. I personally like to buy Canadian as much as possible.. I also like to buy local as much as I can.. I buy veggies, eggs, and whatever I can from the local farmers.. They also have fresh Walleye which I will upon occasion buy.. Unfortunately my fishing days are over....
@Steve North Not too surprisingly, we down here are able to buy Canada-produced food often. Just got some beautiful Bell Peppers recently. I had an article very informatively written by an authority on nutrition, truthful labeling, and the like. She explained that even the Chinese People will not eat the products, many of them, that they export to the States. One reason is the presence of large amounts of pesticides indiscriminately used preparing and growing food products for export. I will try to find the article and post it. Frank
Thanks Frank.. I would be interested in reading it.. Actually, its almost impossible to not eventually buy something from China today.. I'm not meaning only food but almost everything else.. Even the tires on your car are made in China.. That is why I try [as much as possible] to buy not only made in Canada, but also locally, such as fruit, vegetables, eggs, fish, dairy products like cheese, butter, cream, and all dairy, and even poultry.. We are also in one of the largest producing areas of maple syrup in the world.. We try to shop locally as much as we can also.. Again, China does play a BIG role in our economy..
