Again tonight I made fish but not like last night.. Salmon filets sprinkled with a bit of dill and pan fried.. Steamed fresh carrots from our garden.. S/F cherry jello with cream..
Today Thursday is food shopping day for the long week-end coming up.. It is Thanksgiving week-end and my daughter and her daughter are coming up here for the long week-end.. I already bought a 6.2kg turkey for Sunday supper.. Today I will be buying everything else I need for the week-end as well as our weekly shopping.. As far as supper goes for today, unfortunately it will be another one of those days which I will say ....... HOK.... Depends on what I will buy while shopping.. Most likely some chicken on the BBQ ..
Thanks Beth.. I only get to see my daughter and her daughter on Thanksgiving and in the spring at Easter time.. They live in Toronto which is a 6 to 7 hour driver from us.. We are going down to her in mid November for our granddaughter's birthday (9 years old) and just to get away for a mini vacation.. Supper was B/S chicken thighs on the BBQ.. I bought them for supper when shopping.. Steamed and smashed carrots with butter as the veggie.. The carrots were fresh from our garden.. Frozen strawberries sliced with splenda and cream..
@Steve North -- it's always nice to get away for a break from routine. I hope it's not too cold and snowy when you go down to Toronto next month. I check to see what you're eating every day; I'm not low-carb but I'm nosy. Do you do all the cooking?
Beth... Yes, I do ALL the cooking.. I also do the food shopping.. now, I have a theory that if you made the mess while cooking, you clean up your mess after including ALL the dishes... I do the shopping, the planning of a menu, the cooking, the cleaning up and the cleaning of MY kitchen..
Today supper was another last minute one as we spent a good portion of the day preparing for my daughter coming tomorrow.. It was almost 5:00 and I had nothing out for supper, so I decided on a BBQ.. I took out 2 turkey bangers from the freezer to thaw.. I made a coleslaw.. I sliced some fresh garden carrots and steamed them.. I took out from the freezer 2 of my premade chicken burgers and put them on the BBQ frozen along with the two bangers.. I smashed the carrots and added a bit of butter and some parsley flakes........................... VOILA !!!!! We had a rather pleasant meal... Frozen blueberries with cream for dessert.. Breakfast was the usual of 3 eggs each...
Saturday.... tonight my guests will be here for supper.. I will be making a casserole using B/S chicken breast, and loads of veggies.. Individual S/F vanilla pudding in parfait glasses spiked with some peanut butter and served with heavy cream..
Sunday with the girls.. (my daughter and her daughter) and my wife .... Breakfast will be scrambled eggs with turkey bacon and toast for them.. Pot of fresh brewed coffee.. Lunch will be grilled cheese made in large sausage rolls and some veggies for them.. Yogurt for them as a dessert.. Supper will be the turkey supper with stove-top stuffing, cranberry sauce, freshly picked carrots and turnips steamed, peas, Lemon cheesecake for dessert.. Pot of tea.. Snack will be some S/F jello with heavy cream or just plain..
Supper tonight was some leftover turkey... Leftover carrots & turnip Leftover apple crisp.......... I know it isn't low carb, but I am on maintenance and it is Thanksgiving..
I still have lots of turkey leftover but tonight I made some fish for a change.. Salmon fillets in the fry pan.. A fresh salad with my own dressing..
