I took out of the freezer a package of chicken drumsticks.. I will dry marinate them first in the fridge.. On the BBQ they will go.. Steamed cauliflower.. Sliced tomato.. S/F spiked pudding with heavy cream..
Today, I got a nice package of fresh liver , and we had liver and onions for dinner. I made some carbonated water in my Soda Stream, and added some root beer flavoring to that, and it tastes almost like having a bottle of real root beer pop.
We were away for the past few days.. During our trip, unfortunately the carbs were ignored somewhat.. The breakfast at the Comfort Inn is totally carb infested with waffles with syrup, bagels, toast, cereal, scrambled eggs and home-fries and bacon, pastries, and many more carb items.. Now that we are back home, it is back to our way of eating.. Last night for supper I made salmon fillets fried in butter and oil... Steamed cauliflower.. S/F jello with cream....
Supper tonight was B/S chicken breast cooked in a honey/garlic sauce.. A fresh salad.. s/F jello with cream.. Breakfast was the usual of 3 eggs each.. An omelette for my wife with turkey bacon and scrambled eggs for me.. Pot of coffee.. Lunch... as usual.... NOTHING... Snack.. We shared an apple.. each half..
Supper tonight was a stir fry in the wok.. B/S cubed chicken breast marinated for 4 hours, onions, garlic, broccoli florets, sweet pepper, and mushrooms was the veggie.. Vegetable stock was the liquid as well as the marinade.. Breakfast: 3 egg omelette for my wife with turkey bacon 3 scrambled eggs with mushrooms and cheese for me..
supper tonight was.................... Please don't laugh but I forgot all about supper till about 5:30.. total panic on by behalf till I realised I have some frozen chicken burgers I made.. They hit the hot BBQ along with some turkey bangers.. Both were frozen.. Steamed cauliflower to which I mashed it down and added some sour cream and butter..
Today, Monday, we are off to Sudbury for a medical appointment for my wife..... Sudbury is about 125kms east of us.. I will definitely go to Wallmart as that is a treat for us when we go to the BIG CITY... I like to buy their BBQ chicken which will give us 2 meals each.. Now, that will be our supper for Monday.. I will buy a coleslaw as well to go with it.. Just add some sauce and you have a meal...
Supper for tomorrow will again be the almighty ............... HOK I have some BBQ chicken leftover but I don't like to serve the same meal 2 days in a row... it will be for the next day... I have lots of minced chicken in the freezer that I can make some sort of a casserole with... I will see tomorrow what I will be doing for supper...
Well, I ended up making B/S chicken thighs in the fry pan in EVOO that I dry marinated first.. Now, I have a ton of carrots from our garden.. I mean "A TON" ... I made a carrot soufflé with some of them.. it turned out simply great.. My wife asked me to make this again and soon.....
tonight was soul food.......... MEATLOAF ... coleslaw to go with it... Frozen fruit with heavy cream and splenda.. It was an easy day cooking as I worked all day outside winterizing the area....
When I went food shopping on Thursday, there was a special on chicken drumsticks.. I think I bought a small ton of them to freeze.. I put them in a freezer bag 5 at a time.. They are NOT small drums, but rather large.. I ended up freezing 16 bags of drums... Well, for supper tonight I made drums on the BBQ.. This time I used only 4 which is 2 each and that was plenty.. A fresh green salad with my own dressing.. Frozen sliced strawberries with splenda and cream.. The frozen berries freeze the cream making like a strawberry ice cream...
Supper tonight was one of my wife's favourites... I use large B/S breasts for this.. Stuffed chicken breast ..... I cut a pocket in the B/S breast and I stuff it with a mixture of onions, mushrooms, diced pepper, broccoli florets, grated mozzarella, spices and herbs...I pan fry the veggies first to soften them up, let cool, and then add the grated cheese, then stuff.. I then fry the breast in a skillet till just almost golden underneath (just a few minutes) and then transfer it to a preheated oven at 400f till cooked and brown on top.. I find that broil for a few minutes before serving does the trick to brown the top nicely but still keep the meat moist... I serve it with a marinara sauce on top.. it could also be cooked in a marinara sauce or a pasta sauce as well which I will do next time... Steamed cauliflower.. Frozen sliced strawberries with splenda and cream... Pot of tea.....
supper ended up excellent.. I had a spaghetti squash.. I had some homemade pasta sauce in the freezer... We had spaghetti squash and sauce.... We both enjoyed it .... Overate, naturally.. we ate the whole thing !!!!!!!
