supper tonight was salmon fillets pan fried in butter.. I made my own tarter sauce to go with it.. Steamed carrots, smashed with butter... Frozen strawberries with splenda and cream..
supper tonight was a casserole using minced chicken, loads of veggies, cheese and cream, herbs and spices....
Yesterday, I had a large salad, with cheese and plenty of veggies. Today, I intend to eat light because tomorrow I will be flying out to Washington to see family and having to sit on a plane for hours. The next week is going to be the HOC menu for me, since I will be eating whatever everyone else is having.
Supper tonight was totally different.... My dear wife seems to be coming down with a bit of a cold... I had to do something FAST to try to kill the cold... CHICKEN SOUP !!! Yup, I had some frozen in the freezer that I thawed and we had chicken soup for supper with loads of chicken, carrots, parsnips, and fresh dill in it... Good for what ails you.. Better known as ....... Jewish Penicillin ...... Don't ask, ........ but, .... she is feeling better...
I took out yesterday some chicken drumsticks, but changed my mind and had soup instead.. Today I will use those drums and most likely on the BBQ.. I still have a turnip from our garden that I will cube, steam, and add a bit of butter and parsley flakes.....
FISH !! fillets of something breaded and pan fried in some sort of oil and butter... Steamed broccoli with some sort of a sauce over it..
Today it was snowing and cold so I decided to make some soul food.... MEATLOAF ..... but instead of making it in a loaf pan, I made them in muffin tins giving each small individual loaves...I ended up making 12 small loaves from 400g of minced chicken.. Only 2 remained as we ate 10 of them... Steamed turnip from the garden mixed with carrots from the garden, smashed with butter...
Annmarie isn't feeling very well, so I gave her some homemade chicken soup.. I think she has a mild cold.. I also made a BBQ with some of my frozen chicken burgers.. coleslaw... sliced tomato... S/F jello with heavy cream.. Pot of tea...
Tonight for supper will again be some fillets of some kind of fish... its a white fish and not very thick but large fillets... Steamed carrots with some butter and chives.. For dessert, something but I have NO idea what.. Pot of tea for sure..
Its cold, windy and it is getting dark very early... almost depressing... This calls for some soul food .... A vegetable casserole with tuna in it... We always like that meal.. S/F pudding spiked.. Not sure what flavour yet.. Served with heavy cream.. Made with 10% cream instead of milk.... Pot of tea...
Today was a good cooking day.. supper was my invention of chicken burgers cooked in a sauce with a ton of veggies.. Something like a Swiss steak but different.. I also made a carrot soufflé ... Halved peaches in a natural juice for dessert.. Pot of tea... Breakfast: the usual of 3 eggs each..
I have leftovers from last night's supper.. I made 4 nice size burgers and we each had one leaving me with 2 nice size burgers and lots of the veggies leftover.. I used 450g of minced chicken which made 4 half pounder burgers.. That's a nice size... Especially with the veggies.. I also have some carrot soufflé left over as well.. It is almost another meal for us which I will consider for tomorrow or Monday..
tonight i made a stir-fry in the wok on the stove.. B/s cubed and marinated chicken breast, onions, garlic, broccoli, mushrooms, sweet pepper, and carrots was the veggie.. Stock and soy sauce and the marinade of honey/garlic was the liquid.. It was sooo good that we ate the whole thing... No leftovers... Sliced peaches with heavy cream for dessert.. Pot of tea..
For supper tonight, I took out of the freezer 2 chicken legs with the back attached.. they were already skinned and defatted by me before freezing.. I was going to put them on the BBQ,... BUT I realised I was almost out of propane so I decided to bake them in the oven.. I put them in a loaf pan and covered them with a can of mushroom soup.. I also gave them a bit of seasoning and garlic first.. Baked them at 375f for about 60 minutes.. They turned out simply delicious and the meat just fell off the bone.. I steamed some cauliflower to go with it and poured the mushroom sauce over the cauliflower.. Again, good choice as it was also good.. S/F jello with heavy cream for dessert.. Pot of tea...
