Low Carb: What Are We Eating?

    Had a vegetable omelet for breakfast, no cheese in it. Glass of juice and 2 cups of coffee. Followed with a full glass of water. Already had 2 glasses of water prior to meal. Fairly warm today so will take a long walk.

    Supper tonight was a stir fry in the wok on the stove...
    B/S chicken breast cubed and pre marinated in a honey/garlic sauce... loads of fresh veggies..
    Vegetable stock for the liquid along with the marinating sauce..

    OK...... it is now 7:30am and I just got up to go to the bathroom and couldn't fall back asleep. so I came on here for a while...
    As I look outside, it is snowing like the dickens.. They are forecasting up to 40cms of snow for today with high winds.. A real winter storm...

    Time for something for the storm................. CHICKEN SOUP !!!!
    I have some legs that I will take the skin and fat off, cut to separate, and make some real Jewish Chicken Soup...
    I have onions, carrots, parsnips, celery, and loads of chicken... I also have some fresh dill to add to the soup..
    Chicken soup without fresh dill isn't chicken soup... Its chicken broth.....
    I also have some ... Matzo Ball Mix .... to have with the soup... Wow !!! What a treat during the storm....
    I will have lots leftover to freeze for another time..
    chicken soup is good for what ails you....

    Your chicken soup sounds delicious, @Steve North ! Tomorrow is our Thanksgiving holiday, so we have the turkey set out to thaw, and i will put it on to cook first thing in the morning. We don’t do a big meal, but will be having butternut squash along with the turkey.
    My daughter is coming over, and she won’t eat squash, so I am making a potato salad also. Since it IS a special holiday dinner, we will just enjoy everything and not worry about carb content tomorrow.

    Steve, I have a Jewish friend who tells me to always add hot horse radish to my chicken soup as well and it turns out well. Try it. Cures everything, even the doldrums.

    Well, I don't have to tell you what we are having for supper tonight, now do I ......
    CHICKEN SOUP with lots of chicken.. Actually I put 5 legs with the backs that I separated which makes 10 pieces of chicken.. Skin and fat removed of course..
    The soup is on the stove as I post this and it will be on a light boil (simmer) for another 3 hours.. total of 5 hours..
    I will try to make some Matzo balls to go with it but they are very labour intensive to make.. I might just do up some egg noodles instead..

    Soup..... Salad....... Salmon...... Strawberry youcheese..
    Each a small bowl of the soup from yesterday, a fresh salad and pan seared salmon...
    Strawberry youcheese for dessert..

    I thought you would ask me about that....
    I take a large container of plain yogurt (I like the Balkan style because it is very thick) and I put it into a coffee filter (the whole container) that is in a sieve (strainer) that sits on top of a bowl to let the liquid drain out.. I put the whole thing in the fridge (uncovered) overnight to drain out the whey and be left with a really thick yogurt.. It now looks like a cheese in thickness.. Throw out the whey, put the thick yogurt into the bowl and add a package of (your favourite flavour) jello powder.. Mix very very well and you now have a flavoured yogurt called "Youcheese" because it is like a cheese in consistency, it is yogurt, and it is like a desert........
    It is always much better the next day as the flavour is more intense.. I like using a S/F jello like lime or cherry but any powdered jello will do.....
    It sounds like a lot of work but it only takes 2 minutes to do..

    You can buy the yogurt already strained; look for "greek" yogurt. :D

    I often buy the Greek yogurt but it too must be done as I explained in order to get the whey out to make a proper youcheese..
    It isn't the type of yogurt but the consist which must be thick with No whey....I find the Greek yogurt too liquid...
    I use the Balkan yogurt which is what we get up here..

    Supper tonight was chicken soup again..... Lots of chicken in the soup..
    There was lots leftover, so I froze it in containers.....
    Dessert was S/F vanilla pudding poured over half a stewed peach to cover it..

    Supper tonight (Sunday) will most likely be spaghetti squash with my homemade pasta sauce..
    I have a spaghetti squash that keeps looking at me in the kitchen.. Time to relieve it of its misery..
    I have lots of minced chicken that will make a lovely sauce along with a can of diced tomatoes and other things..
    Pot of tea..

    Breakfast will be pancakes made with wheat gluten which is a very low carb flour..
    Served with S/F syrup..
    Pot of Folgers..

    I didn't make the spaghetti squash... Please don't ask me why ...!!!!!
    Instead I took the minced chicken and I made a meat loaf ..... BUT ..... I made it in a muffin tin instead of a loaf pan.. I ended up with 12 mini meat muffins..
    Coleslaw..
    Stewed peaches with cottage cheese for dessert..
    Pot of tea.....
